Carrots Roasted to Perfection with Flavors of Garlic and Balsamic!

Carrots are a great side dish to any meal especially prepared like this! We love our Balsamic marinade on our Brussels Sprouts Sweetly Roasted recipe so much, we experimented with carrots. To our surprise, they are not very sweet but the flavors roasted in to the carrots creates a delicious flavor and now we are addicted! We paired them with our Easy Dinner Quiche in this recipe, Delicious! Carrots are also a budget friendly vegetable that is usually available year round. We easily doubled our recipe for our family!

Prep Time: 15 Minutes
Marinating Time: 30 Minutes
Oven Roasting Time: 45 – 55 Minutes
Oven Temperature: 400 Degrees Fahrenheit

Balsamic Roasted Carrots:

1/2 LB Carrots (About 4 Fat Carrots)
2 Tablespoons Minced Garlic
2 Tablespoons Balsamic Vinegar
1 Tablespoon Extra Virgin Olive Oil
1/2 Teaspoon Ground Black Pepper
1/4 Teaspoon Salt

Roasted Carrots Instructions:

1. You will need a pan for roasting in the oven. We like to use our Calphalon Pans for most of our cooking! First thing to do is peel the outside skin off carrots. Than cut the carrots in to about 1 inch chunks. Like this!

2. Once the carrots are cut up and put in to the pan, it’s time to add the ingredients. Add Garlic, Balsamic Vinegar, Olive Oil, Black pepper and Salt. Mix up making sure all ingredients have coated the carrots! Let sit and Marinate for about 30 Minutes.

3. PreHeat Oven at 400 Degrees F. Cook for 20 – 25 Minutes, than stir carrots and marinade juices to coat carrots again. Some browning will start to happen during half way point.

Now cook the carrots for another 20 – 25 Minutes or until a fork can easily poke through carrots. The carrots should look roasted with browning before taking them out of the oven! Like This!
