Sweet Potatoes are usually available in the Fall Season and are one of the Main Sides on the Thanksgiving Table! We do not Like the Traditional Mashed Sweet Potatoes or Yams but when we started Roasting our Sweet Potatoes, there are No Leftovers! Prep Time: 10 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Oven Roasting Time: 45 – 50 Minutes
Serves 4 – 6
Roasted Balsamic Sweet Potatoes Ingredients:
4 Medium Sweet Potatoes Peeled
2 Tablespoons Fresh Minced Garlic (about 2 Cloves)
3 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Balsamic Vinegar
1 Teaspoon Salt
1 Teaspoon Ground Black Pepper
Roasted Balsamic Sweet Potatoes Instructions:
1. First thing to do, Peel the Sweet Potatoes and then Cut them up in to 1 – 2 inch Cubes. Then put all the Cubed Sweet Potatoes on a Baking Sheet with Parchment Paper (to prevent sticking to the pan).
TIP: Sweet Potatoes can be a little hard to cut, to avoid cutting yourself, we like to cut the Sweet Potato in Half (not lengthwise). This allows you to have a flat side of the Potato, then cut that half Lengthwise and then cut in to Cubes. See Video Below to watch how we do this!
2. Next, add Fresh Minced Garlic, Extra Virgin Olive Oil, Balsamic Vinegar, Salt and Ground Black Pepper on the Pan of Cubed Sweet Potatoes. Mix all the Ingredients up really well, making sure all the Sweet Potatoes are coated with the Marinade. We just toss the Ingredients with our Hands, but you can use a Spatula as well. Spread out the Sweet Potatoes evenly on the Pan.
3. PreHeat Oven at 375 Degrees F. Roast the Sweet Potatoes for 30 Minutes. Then Flip all the Potatoes Over and even them out on the Pan.
4. Now, Roast the Sweet Potatoes for 15 – 20 Minutes Longer. You want these to be Soft inside and Roasted Outside.
