Roasted Tex Mex Asparagus are Marinated with Garlic, Lemon Juice, Cumin and Chili Powder then Roasted in the Oven!
Fresh Asparagus is a Real treat in our home and our favorite way to eat it, is Marinated and then Roasted! Our Tex Mex version is full of Taco Flavors and when Roasted, the Asparagus soaks up all those flavors! We like to Roast them just a little so the Asparagus still has a Crunch! No Mushy Asparagus! Prep Time: 10 Minutes
Marinating Time: 20 Minutes
Oven Temperature: 350 Degrees Fahrenheit
Roasting Time: 15 – 20 Minutes

Roasted Tex Mex Asparagus Ingredients:
1 Pound Asparagus (about 25 Spears)
3 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Lemon Juice
2 Tablespoons Fresh Minced Garlic (about 2 cloves)
2 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
1 1/2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
Roasted Tex Mex Asparagus Instructions:
1. First, you will need a Nonstick Baking Sheet or you can put Parchment paper down like we did. Prepare the Asparagus by washing them and letting them dry. Cut the Purple end part off the Asparagus and put them on the Baking Sheet.
Tip: You don’t have to cut the ends of the Asparagus, sometimes we do like in this Recipe.

2. Next, Add Extra Virgin Olive Oil, Lemon Juice, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt and Ground Black Pepper to the Baking Sheet of Asparagus. Now, Toss the Ingredients together, you can do this with your Hands. Then even out the Asparagus on the Pan. Let Marinate for 20 Minutes.
3. PreHeat Oven at 350 Degrees F. Roast the Asparagus for 15 – 20 Minutes. When they are done, the Asparagus will still have some crunch to them and won’t be mushy.
