Prep Time: 10 Minutes
Marinating Time: 20 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Roasting Time: 40 – 45 Minutes
Serves 4
Roasted Tex Mex Yellow Squash Ingredients:
4 Medium Yellow Squash
4 Tablespoons Extra Virgin Olive Oil
4 Tablespoons Fresh Minced Garlic (about 4 cloves)
3 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
Roasted Tex Mex Yellow Squash Instructions:
1. First, you will need to prepare the Yellow Squash. Cut the Squash in to Chunks, First cut the Yellow Squash in half lengthwise, then cut the Halves in to 1/2 inch Chunks. Put all the Chunks in a Bowl for the Next Step.
2. Next, in the Bowl with the Yellow Squash Chunks, Add Extra Virgin Olive Oil, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt and Ground Black Pepper.
3. Now, put the lid on the Bowl and Shake up the Bowl of Ingredients. Let Marinate in the Bowl for 20 Minutes.
After the Yellow Squash has Marinated, You will need a Baking Sheet with Parchment Paper or a Good Nonstick Baking Sheet. Pour the Yellow Squash and Marinade on the Pan. Arrange all the Chunks so they lay flat and not on top of each other.
4. PreHeat Oven at 375 Degrees F. Roast the Yellow Squash for 40 – 45 Minutes. You don’t need to turn the Squash over during Roasting but you can if you prefer. When the Yellow Squash is done, it will have a Roasted outside and a slightly soft but Not Mushy inside. Take out of the Oven and let cool for a few Minutes.
