Prep Time: 15 Minutes
Cooking Brown Rice on StoveTop: Low/Medium (about 2.5 – 3 on our Stove)
Cooking Brown Rice Time: 40 – 50 Minutes
Oven Temperature for Ground Turkey: 350 Degrees Fahrenheit
Baking Time for Ground Turkey: 40 Minutes
Baking Time for Broccoli: 30 Minutes

Tex Mex Ground Turkey Rice Casserole Ingredients:

Brown Rice Ingredients:

2 Cups Brown Rice
5 Cups Water
5 Teaspoons Chicken Bouillon (we only use Better Than Bouillon)
2 Tablespoons Fresh Minced Garlic (about 2 Cloves)
2 Teaspoons Ground Cumin
1 Teaspoon Chili Powder

Ground Turkey Ingredients:

2 Pounds Ground Turkey
2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Lemon Juice
2 Tablespoons Fresh Minced Garlic (about 2 Cloves)
2 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
2 Teaspoons Salt
1 Teaspoon Black Pepper

8 Cups Broccoli (Fresh or Frozen)

Tex Mex Ground Turkey Rice Casserole Instructions:

1. First thing to do, In a Stovetop Pan with a Lid, add Brown Rice, Water, Chicken Bouillon, Fresh Minced Garlic, Ground Cumin and Chili Powder. Mix all the Ingredients really well. Put the Pan on the Stovetop and bring the Ingredients to a slight Boil, then turn the Stovetop to Low/Medium, Place the Lid on the Pan and Cook for 40 – 50 Minutes.

TIP: If you are using Prepared Chicken Stock, Replace all the Water with it and don’t add Chicken Bouillon. White Rice will not need 5 Cups of Water (check package on how to prepare).

2. Next, PreHeat Oven at 350 Degrees F. Now in a Oven Safe Pan, add Ground Turkey, Olive Oil, Lemon Juice, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt and Black Pepper. Mix up all the Ingredients really well. Bake the Ground Turkey Mixture for 40 Minutes (after 20 Minutes, Mix up Ground Turkey Mixture and then Continue to Bake).

TIP: We Bake our Ground Turkey Mixture in the Oven to make the Meat Chunky, You can also Cook this Mixture up on the Stovetop!

3. While the Ground Turkey Mixture is Baking in the Oven, this is a good time to Roast the Broccoli. On a Baking Sheet, add the Broccoli and Spread them out on the Pan. Bake for 20 Minutes in the Oven with the Ground Turkey Mixture.

4. When all the Ingredients are done, Take them out of the Oven and Off the Stovetop. Let them cool for a Minute.

5. Final step, Take the Brown Rice Mixture, Ground Turkey Mixture and Roasted Broccoli and Put it all in One Pan, Stir the Ingredients really well and then Serve!
