Our Twice Baked Potatoes are an Easy Side Dish addition to a Meal or a Delicious Vegetarian Meal! We love to create Twice Baked Potatoes using what we have around the Kitchen. Our Budget Friendly Onion, Mushroom and Garlic Stuffed Potatoes and Then Smothered with Cheddar Cheese are one of those versions that we eat a lot! Prep Time: 20 Minutes
Oven Temperature: 350 Degrees Fahrenheit
Baking Time: 40 – 50 Minutes
Serves 4 – 6
Cheesy Mushroom Twice Baked Potatoes Ingredients:
4 Big Potatoes
1 Small Onion
1 1/2 Cups Sliced Mushrooms
2 Tablespoons Fresh Minced Garlic
1/2 Cup Yogurt
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
1 Cup Sharp Cheddar Cheese
Cheesy Mushroom Twice Baked Potatoes Instructions:
1. First thing to do, is to Cook the Potatoes. You can do this in the Oven or in the Microwave. When the Potatoes are done, set them aside to Cool. When the Potatoes have cooled, Cut them in Half Long ways.
2. Next in a Bowl, add Chopped Onions, Chopped Mushrooms, Fresh Minced Garlic, Yogurt, Salt and Ground Black Pepper. Then Scoop out the Potato Meat with a spoon and add it to the Bowl of Ingredients. Make sure to leave a layer of Potato Meat on the Potato Skin.
3. Now Mix the Ingredients in the Bowl just enough to incorporate all the Ingredients. We like leave the Potato Meat a little Chunky. On a Baking Sheet with Parchment Paper, Put the Scooped out Potato Skins spaced out evenly on the Pan.
4. Next you will take the Mixed up Ingredients and start stuffing each Potato Skin Evenly. Then Sprinkle the Shredded Cheddar Cheese on Top.
TIP: Parchment Paper really Helps the Cheese and Potato to NOT Stick to the Pan. If you have a Non Stick Baking Sheet, you probably Won’t need the Paper!
5. PreHeat the Oven at 350 Degrees F. Bake the Cheesy Mushroom Twice Baked Potatoes for 40 – 50 Minutes. We like our Cheese Extra Crispy and Golden Brown, so we Baked for 50 Minutes.
