Roasted Coriander Curry Chicken Leg Quarters Ingredients:

4 – 5 Chicken Leg Quarters
1/4 Cup + 3 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Fresh Minced Garlic (about 3 cloves)
2 Tablespoons Balsamic Vinegar
2 Teaspoons Coriander Powder
2 Teaspoons Curry Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper

Roasted Coriander Curry Chicken Leg Quarters Instructions:

1. First, you will need a Baking Sheet, Add 3 Tablespoons of Extra Virgin Olive Oil and Fresh Minced Garlic. Stir the ingredients to coat the Bottom of the Baking Sheet. Now arrange the Chicken Leg Quarters evenly on the Pan. 

TIP: We put the Minced Garlic on the Bottom so the Garlic doesn’t burn during Roasting. It also adds a lot of flavor to the Bottom of the Chicken!

2. Next, In a Bowl, Add 1/4 Cup of Extra Virgin Olive Oil, Balsamic Vinegar, Coriander Powder, Curry Powder, Salt and Ground Black Pepper. Mix up the Marinade, then Brush it all over the Top of each Chicken Leg Quarter. Marinate for 20 – 30 Minutes.

3. PreHeat Oven at 400 Degrees F. Roast the Chicken Leg Quarters for 45 – 55 Minutes or until the Chicken is Cooked. No need to Flip the Chicken over.
