Prep Time: 10 Minutes
Marinating Time: 20 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Roasting Time: 25 – 30 Minutes 
Roasted Zucchini - Dining in with Danielle

Roasted Tex Mex Zucchini Ingredients:

3 Medium Zucchini
3 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Fresh Minced Garlic (about 3 cloves)
3 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
1 Teaspoon Ground Black Pepper
1/2 – 1 Teaspoon Salt

Roasted Tex Mex Zucchini Instructions:

1. First, you will need to prepare the Zucchini. Cut the Zucchini in to Chunks, First Cut the Zucchini in Half Lengthwise, then cut the Halves in to 1/2 inch chunks. Put all the cut Zucchini in a Bowl for Marinating.

2. Next, in the Bowl with Zucchini Chunks, Add Extra Virgin Olive Oil, Fresh Minced Garlic, Ground Cumin, Chili Powder and Ground Black Pepper. Don’t Add Salt Yet.

3. Now, put the Lid on the Bowl with the Ingredients and Gently Shake up to Mix. Marinate for 20 Minutes. After the Zucchini has Marinated, You will need a Baking Sheet with Parchment Paper or a Nonstick Baking Sheet. Pour the Zucchini with the Marinade on the Baking Sheet and Spread them evenly, laying flat and not on top of each other. Sprinkle Salt on top of the Zucchini.

4. PreHeat Oven at 375 Degrees F. Put the Zucchini in the Oven and Roast for 15 Minutes, then Flip the Zucchini Chunks Over and Roast for Another 10 Minutes. These are not Mushy, they have a Slight Crunch with Roasted Outside.
