Prep Time: 15 Minutes

Smashed Potatoes - Dining in with Danielle

Smashed Tex Mex Potatoes Ingredients:

8 Small Potatoes
1/4 Cup Extra Virgin Olive Oil
2 Tablespoons Fresh Minced Garlic (about 2 cloves)
2 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Powder

Smashed Tex Mex Potatoes Instructions:

1. First, you need to prepare the Potatoes. Cook the whole Potato in the Microwave or in the Oven until Done, Take out and let cool. 

Next, In a Bowl, Add Extra Virgin Olive Oil, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt and Ground Black Pepper. Mix the Marinade really well. Now, you need a Baking Sheet, Add about half of the Marinade to the Baking Sheet and Spread around. Cut each Potato in Half and put Flat side down on the Baking Sheet.

2. Next, Brush on the rest of the Marinade on top of the Potatoes. With a Potato Masher, Slightly Mash down each Potato to be almost flat. If you don’t have a Potato Masher, Use a Fork to Gently Flatten the Potatoes.

3. PreHeat Oven at 400 Degrees F. Roast the Potatoes for 20 Minutes. Then turn the Potatoes over and Roast for another 15 – 20 Minutes. Take out of Oven and let the Potatoes cool slightly. There will be some burnt on the Pan but does not effect the Flavor!
