Yellow Squash Roasted in the Oven with Flavors of Sweet Balsamic Vinegar, Fresh Garlic and Cumin Seasoning for some extra Zest!
Roasted Yellow Squash is our favorite way to prepare this Vegetable! The Balsamic Vinegar, Garlic and Cumin Marinate together creating a Tex Mex Sweet Flavor. The Squash Roasts on the outside and is a little Firm on the inside and is not Mushy! Make Sure To Check Out all our Side Dishes Here!

Prep Time: 10 Minutes
Marinating Time: 20 Minutes
Oven Roasting Temperature: 375 Degrees Fahrenheit
Roasting Time: 25 – 30 Minutes
Serves 4
Sweet Roasted Yellow Squash Ingredients:
3 Medium Yellow Squash
3 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Balsamic Vinegar
3 Tablespoons Fresh Minced Garlic (about 3 cloves)
2 Teaspoons Ground Cumin
1 Teaspoon Ground Black Pepper
1 Teaspoon Salt
Sweet Roasted Yellow Squash Instructions:
1. First you will need to Prepare the Yellow Squash. We like our Squash to be in Chunks so they don’t get Mushy during Roasting, just cut the Squash in half lengthwise, then cut those halves in to 1/2 inch Chunks. Put all the Yellow Squash Chunks in a Bowl for the Next Step.
2. Next in the Bowl with the Yellow Squash Chunks, add Olive Oil, Balsamic Vinegar, Fresh Minced Garlic, Ground Cumin and Ground Black Pepper. (Don’t put the Salt in yet.)
3. Now put the lid on the Bowl and Shake up the Bowl to Mix up the Ingredients really well. Let the Yellow Squash and Ingredients Marinate for 20 Minutes.
After the Yellow Squash has Marinated, Next you will need a Baking Sheet with Parchment Paper (if you have a good Nonstick Pan, you might not need Parchment Paper). Now pour all the Yellow Squash and Marinade on the Baking Sheet. Arrange all the Squash chunks evenly on the Pan. SPRINKLE WITH SALT!
4. PreHeat the Oven at 375 Degrees F. Roast the Marinated Yellow Squash for 15 Minutes, then flip the Squash Chunks over and continue Roasting for another 10 Minutes. When the Roasted Yellow Squash is done, the Squash will still have a slight Crunch with Roasted Outside. These will not be Mushy. Take out of the Oven and let set for a Minute.
