Serves 4 – 6
Tex Mex Chicken Broccoli Brown Rice Ingredients:
1 Pound Chicken Breasts
8 Cups Frozen Broccoli (The Broccoli will condense down after cooking)
2 Cups Brown Rice
5 Cups Water
5 Teaspoons Chicken Bullion (We only use Better Than Bullion)
4 Tablespoons Fresh Minced Garlic (About 4 Cloves)
2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Lemon Juice
4 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
1 Teaspoon Salt
1/2 Teaspoon Ground Black Pepper
TIP: You can also use Liquid Chicken Bullion, Just replace all the Water for Bullion and Omit the Better Than Bullion!
Tex Mex Chicken Broccoli Brown Rice Instructions:
1. First thing to do, is to prepare the Brown Rice. In a Stove Top Pan with a Lid, add Brown Rice, Water, Chicken Bullion, 2 Tablespoons Fresh Minced Garlic, 3 Teaspoons Ground Cumin and Chili Powder. Mix thoroughly and set aside with the Lid on until Next Step! This also helps the Ingredients to soak in the Rice for a little bit!
2. Next is to Prepare the Chicken Breasts, In a Oven Safe Pan or Baking Sheet, Put the Whole Chicken Breasts in the Pan. Now for the Marinade, In a Bowl, add Extra Virgin Olive Oil, Lemon Juice, 2 Tablespoons Fresh Minced Garlic, 1 Teaspoon Ground Cumin, Salt and Ground Black Pepper. Mix up the Ingredients and Pour the Marinade over the Chicken Breasts.
3. PreHeat the Oven for 350 Degrees F. Bake the Chicken Breasts for 45 – 50 Minutes. At the same time, Cook the Tex Mex Brown Rice on the Stove Top at Low/Medium (this is 2.8 on our Stove Top) for about 40 – 50 Minutes! In the Last 20 Minutes of Baking the Tex Mex Chicken Breasts, Put the Pan of Frozen Broccoli in the Oven to Roast. When Chicken, Brown Rice and Broccoli are done, set aside for next Step!

4. Now that all the Ingredients are done, it’s time to put it all together. Slice up the Chicken Breasts and put them back in the Pan they Baked in. Stir the Sliced Chicken Breasts around the Pan, making sure to get all those Seasonings coating the Chicken. Now in the Pan that the Broccoli Roasted in, add the Sliced Chicken Breasts and all the Tex Mex Brown Rice. Mix up all the Ingredients and Serve!
