Cook Potatoes in Microwave or Oven Before Stuffing
Tex Mex Meatloaf Potatoes Ingredients:
6 – 8 Medium Potatoes (Red or Russet Potatoes)
1 Pound Ground Turkey (also can use Beef or Chicken)
4 Tablespoons Fresh Minced Garlic (about 4 Cloves)
3 Teaspoons Ground Cumin
1 1/2 Teaspoons Chili Powder
2 Teaspoons Salt
1 Teaspoons Ground Black Pepper
Tex Mex Meatloaf Potatoes Instructions:
1. First, you will need to cook the Potatoes, We use the Microwave but you can Bake them in the Oven! After done, let the Potatoes Cool! Next, Line a Baking Sheet with Parchment Paper. Start by cutting the Potatoes in Half Lengthwise, Then Scoop out the Potato inside to make a Cup, Put the Potato Insides in a Bowl. Make sure to leave an even layer of potato Meat on the Potato Skin.
2. In a Bowl, Add Ground Turkey, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt, Ground Black Pepper and the Potato that you Scooped Out.
3. Now, Mix up the Meatloaf Ingredients, Making sure not to Mush the Potatoes too much, Leave some Chunks! Start filling the Potato Skins with the Meatloaf Mixture.
TIP: I put Olive Oil on my hands before Mixing, so the Ingredients don’t stick to your Hands!
4. PreHeat Oven at 400 Degrees F. Bake the Meatloaf Potatoes for 40 – 45 Minutes or until the Raw Meat is Cooked and Brown on Top.
