Pasta Pot Pie with leftover Turkey or with Chicken, Vegetables and Cheese!

Chicken pot pie is a delicious way to use leftover turkey or chicken meat! It’s one of our favorite comfort foods but we wanted to make it simpler, so we use pasta in our recipe and Not a crust! We have been making this Leftover Turkey Pot Pie Pasta every time we cook a turkey or with chicken breasts. It is simple, delicious and a Crowd Pleaser and if you wanted to make this a vegetarian meal or a side dish (also very yummy), then just take out the meat!

Prep Time: 20 Minutes

Oven Temperature: 350 Degrees Fahrenheit

Chicken Pot Pie Pasta:

16 Ounces Cooked Pasta (Not Mushy pasta! We use all kinds of different pasta shapes, this one we used Rotini Organic noodles)
3-4 Chicken Breasts OR (in this recipe, we showed you how we altered the meat with our leftover Juicy Turkey)
1 Onion Chopped
1 Cup Green Beans (we have used fresh green beans and frozen but canned green beans might be mushy)
1 Cup Corn (Frozen or canned corn is good)
1 Tablespoon Minced Fresh Garlic
2 Tablespoons Olive Oil
1 Teaspoon Black Pepper
Salt to taste (we don’t use a lot of salt so a 1/2 teaspoon would be good for us)
1 Cup Chicken Bullion (we use Organic Better Than Bouillon because it has a natural flavor with not all the salt)
1 Cup Plain Yogurt (trust us, you can’t taste it but the yogurt helps give a creamier but healthier pasta)
1 Cup Shredded Cheese 

Chicken Pot Pie Pasta Instructions:

1. First thing to do is cook the pasta. We cook our pasta Al Dente for meals that will have a second cooking in the oven because we don’t like mushy noodles. When the pasta is done, drain and set aside.

2. Next is chopping up the onions and green beans. (We like to taste our vegetables, so we chop the onions and green beans more than bite size.) So we cut them like this!

3. We want to saute the vegetables up first, so in a frying pan put Olive oil in and let it heat up on medium heat. Put the garlic, onions, green beans and corn in the pan and stir it around and let them cook a bit until some browning happens. Set aside. 
At this time, cut up the chicken breast and cook it up in a frying pan til done than add it to the sauteed vegetables. (We used already cooked leftover turkey but we usually make this with chicken breast.)

4. It’s time to put everything together! You will need a casserole pan (we use our roaster pan because we double or triple the recipe). Put the pasta, vegetables, chicken, salt and pepper in the pan and stir it up! (Tip: Taste the pasta ingredients to make sure the salt and pepper are to your liking.)

5. Final steps! Once all the ingredients are mixed, now you need to add the yogurt and mixed it up without breaking all the pasta! Than you take the 1 cup of chicken bullion and poor it over the pasta mixture. Now sprinkle the cheese over the top!

6. Bake at 350 F Degrees for 30 Minutes!
