The Fajita Vegetables and all the Seasonings Soak in to the Pasta and create a light Sauce, we don’t even miss the Meat! Oven Temperature: 400 Degrees Fahrenheit (Vegetables Only)
Roasting Time: 35 – 40 Minutes
Cook Spaghetti according to Package Instructions
Serves 4
Fajita Vegetarian Spaghetti Ingredients:
16 Ounce Package Spaghetti Pasta
2 Green Bell Peppers
2 Yellow Onions
3 Tablespoons Fresh Minced Garlic (about 3 cloves)
4 Tablespoons Extra Virgin Olive Oil
4 Teaspoons Ground Cumin
2 Teaspoons Chili Powder
3 Teaspoons Salt
1 Teaspoon Ground Black Pepper
1/4 Cup Extra Virgin Olive Oil (added to cooked Spaghetti)
Fajita Vegetarian Spaghetti Instructions:
1. First Thing to Do, is to prepare the Vegetables. You want these to be cut up Fajita Style. Then Put all the Vegetables on a Baking Sheet with Parchment Paper. Next Add Fresh Minced Garlic, Extra Virgin Olive Oil, Ground Cumin, Chili Powder, Salt and Black Pepper to the Pan of Peppers and Onions. Mix up all the Ingredients (we do this with our hands) then spread all the Vegetables evenly on the Pan.
2. PreHeat Oven at 400 Degrees F. Roast the Fajita Vegetables for 35 – 40 Minutes. While the Vegetables are Roasting, This is a Good Time to cook the Spaghetti Pasta. Cook the Pasta according to the directions on the Package. When the Pasta is done, Drain and put them in a Big Bowl or Pan.
Cooked Spaghetti Pasta, Drained and ready for next step!
3. Now, Add the Roasted Fajita Vegetables and the 1/4 Cup of Extra Virgin Olive Oil to the Pan of Cooked Pasta. Mix the Pasta and Ingredients, Making sure all the Pasta is coated with the Seasonings and Vegetables. Ready to Serve!
