Mashed Cauliflower has become a great Side Dish in our House, it is Easy and full of Flavor. You can use Fresh or Frozen Cauliflower and the results are almost the same. We love Creaming up the Mashed Cauliflower with Cream Cheese and adding Fresh Garlic, it is so good. If you don’t have time to make Mashed Potatoes, then just Whip this Side up! Serves 4

Garlic Cream Cheese Mashed Cauliflower Ingredients:
8 Cups Cauliflower Fresh or Unthawed
4 Cups Water
2 Tablespoons Chicken Bouillon (we use Better Than Bouillon)
2 Tablespoons Fresh Minced Garlic
1 8 ounce Package Cream Cheese
1 Teaspoon Ground Black Pepper
Tip: If you are using Canned Chicken Bouillon, you will not need to add Water.
Garlic Cream Cheese Mashed Cauliflower Instructions:
1. First you will need a Pot for Boiling, add the Cauliflower, Water and Chicken Bouillon. If you are using Canned or Boxed Bouillon, then add 4 Cups and No Water. Boil on Medium for 20 – 25 Minutes or until the Cauliflower is soft.
2. After the Cauliflower is done, Drain them and then put them back in the Pot. Next add Fresh Minced Garlic, Cream Cheese and Ground Black Pepper to the Pan of Cooked Drained Cauliflower.
3. Now with a Hand Potato Masher, or Food Processor, Mash up all the Ingredients together. Hand Mashing will still have a few Lumps, this is the way we prefer to Eat it.
