Homemade Moist Banana Muffins sweetened with Ripe Bananas and Less Sugar! These are great for Breakfast, snacks or a Healthier Dessert!

We love Baking with Ripe Bananas, the browner the better! They are naturally Sweet and you can use less Sugar. Over the years, we have experimented with the Sugar amounts and found out that using only 1/2 Cup of Sugar Cane in this Recipe is all you need with Ripe Bananas! We have lots of Baking Ideas with Bananas with different options, like Cakes, Cupcakes and Breads!

Prep Time: 20 Minutes
Oven Temperature: 350 Degrees Fahrenheit
Baking Time: 20 – 25 Minutes
Makes 12 Muffins
Healthier Banana Muffins - Dining in with Danielle

Moist Banana Cake Muffins Ingredients: 

2 Cups Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1 1/2 Teaspoons Ground Cinnamon 
1/4 Teaspoon Ground Nutmeg
1/2 Teaspoon Salt
1/2 Cup Sugar Cane
3/4 Cups Butter Melted (Only use Real Butter)
2 Eggs
2 – 3 Ripe Bananas Mashed

Moist Banana Cake Muffins Instructions:

1. First you will need a bowl for the dry ingredients, add Flour, Baking Soda, Baking Powder, Ground Cinnamon, Ground Nutmeg and Salt. Mix up thoroughly and then set it aside.

2. Next you will need another Bowl for Wet ingredients, add Melted Butter and Sugar and mix up until Sugar is dissolved. Then add Mashed Bananas and Eggs. Mix thoroughly, make sure not to over mix or the Bananas will start making air bubbles, some bubbles are good.

TIP: We use our KitchenAid Mixer for this but we have whipped this up by hand many times!

3. Now you will add the Dry ingredients to the Wet ingredients and mix. Just mix until all ingredients are incorporated. Over Mixing will cause the batter to get Air Pockets and start rising.

4. Now you will need a Non Stick Muffin Pan, If you do not have a Non Stick Pan, you will need to Grease the Pan so the Muffins do not Stick. Spoon the Banana Muffin Batter in to each Muffin Cup evenly. You will need to do this quickly because the Bananas start making the Batter rise.

5. PreHeat the Oven to 350 Degrees F, Make Banana Muffins for 20 – 25 Minutes. Before Taking the Muffins out of the oven, check with a toothpick to make sure the Batter is Fully Baked.
