Prep Time: 20 Minutes
Marinating Time: 30 Minutes – 1 Hour
Oven Temperature: 400 Degrees Fahrenheit
Baking Time: 60 Minutes

Oven Fried Tex Mex Chicken Leg Quarters Ingredients: 

4 – 5 Chicken Leg Quarters (Skin On)
1/3 Cup Balsamic Vinegar
1/3 Cup Extra Virgin Olive Oil
2 Tablespoons Fresh Minced Garlic (about 2 cloves)
3 Teaspoons Ground Cumin
1 1/2 Teaspoons Chili Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
1 1/2 – 2 Cups Whole Wheat Flour
1/3 Cup Extra Virgin Olive Oil (for Oven Frying)

1. First, you will need a Pan for Marinating the Chicken Leg Quarters, then put them on the Pan with the Skin On. Next, In a Bowl, Add Balsamic Vinegar, Extra Virgin Olive Oil, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt and Ground Black Pepper. Mix up the Marinade really well. Brush the Marinade on each Chicken Leg Quarter Skin Side First. Then Flip the Chicken Over and Brush the rest of the Marinade on Each Chicken. Let Marinate on the Pan for 30 Minutes – 1 Hour.

2. Now, you will need a Baking Sheet, Add 1/3 Cup Extra Virgin Olive Oil. Next, put 1 1/2 – 2 Cups of Whole Wheat Flour on a Plate. Flour the Marinated Chicken Leg Quarters on both sides and put them Skin Side Up on the Baking Sheet.

TIP: We only use Wheat Flour, it sticks really good and is More Crispy!

3. PreHeat Oven at 400 Degrees F. Bake for 35 Minutes. Then Flip the Chicken Leg Quarters Over and Bake for 15 Minutes. Finally, Flip the Chicken back over, Skin Side Up and Bake for 10 More Minutes. This Method Makes Crispy Skin, Don’t Skip the third Flip, or the Chicken will not be Crispy on Top.
