Prep Time: 20 Minutes
Stove Top Rice Temperature: Medium/Low (around 2.5 – 3)
Cooking Rice Time: 45 Minutes
Oven Temperature: 400 Degrees Fahrenheit
Roasting Time: 45 Minutes
Serves 4 – 6
Roasted Broccoli Wild Rice Ingredients:
2 Cups Wild Rice Blend
5 1/2 Cups Water
3 Tablespoons Chicken Better Than Bouillon (for Vegetarian, Use Vegetable Bouillon)
3 Tablespoons Fresh Minced Garlic (about 3 Cloves)
1 Teaspoon Ground Black Pepper
6 Cups Unthawed or Fresh Broccoli
2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Fresh Minced Garlic (about 2 cloves)
1 Teaspoon Salt
1/2 Teaspoon Ground Black Pepper
TIP: We like to let our Wild Rice soak in the Water for at least 20 Minutes, Makes the Rice Softer!
Roasted Broccoli Wild Rice Instructions:
1. First, you will need a Stovetop Pan with a Lid. Add the Rice and Water and let it sit for 20 Minutes. Then add Bouillon, Fresh Minced Garlic and Black Pepper. Stir the Rice Ingredients and then turn on the Stovetop to Medium and bring the rice to a simmer. Don’t put the Lid on yet!
2. While the Wild Rice is coming to a Simmer, this is a good time to prepare the Roasted Broccoli. On a Baking Sheet, Add Broccoli, Extra Virgin Olive Oil, Fresh Minced Garlic, Salt and Ground Black Pepper. Mix up the Ingredients and spread the Broccoli evenly on the Baking Sheet.
3. PreHeat the Oven at 400 Degrees F. Put the Broccoli in the Oven and Roast for 45 Minutes. At this time, the Rice should be Simmering, Turn the Stovetop down to Medium/Low (around 2.5 – 3 on my stove). Put the Lid on the Pan of Rice and Cook for 45 Minutes.
4. After the Wild Rice and Roasted Broccoli are done (the Wild Rice should be cooked through and Not crunchy on the inside of the Rice, the Broccoli will have some Roasting but still have texture, not mushy), Add the Roasted Broccoli to the Pan of Cooked Wild Rice.
5. Finally, Mix the Roasted Broccoli and Wild Rice together and Serve.
