Roasted Carrots are our Favorite way to eat this Delicious Side Dish! These Baby Carrots are Sweet and Marinated with Some Spicy Tex Mex Seasonings and when Roasted in the Oven, it creates a Delicious Flavor! We have many different Roasted Vegetable Recipes and is the only way we Prep Vegetables. We do not like Boiled or Microwave Mushy Vegetables, By Oven Roasting Vegetables, the Flavor does not get Boiled away in Water. For More Side Dish Recipes, Click Here!

Prep Time: 10 Minutes
Marinating Time: 20 Minutes

Roasted Spicy Carrots Ingredients:

2 Pounds Baby Carrots
4 Tablespoons Fresh Minced Garlic (about 4 Cloves)
6 Tablespoons Extra Virgin Olive Oil
4 Teaspoons Ground Cumin
2 Teaspoons Chili Powder
1 Teaspoon Cayenne Pepper
2 Teaspoons Salt
2 Teaspoons Ground Black Pepper

TIP: If you are making 1 Pound of Carrots, Half all the Ingredients!

Roasted Spicy Carrots Instructions:

1. First, you will need a Baking Sheet with Parchment Paper (or a Good Nonstick Baking Sheet). Next Add Carrots, Fresh Minced Garlic, Extra Virgin Olive Oil, Ground Cumin, Chili Powder, Cayenne Pepper, Salt and Ground Black Pepper to the Baking Sheet.

2. Now, Mix up all the Carrots with the Ingredients (we do this with our hands, but you can put all the Ingredients in a Bowl and Mix). Make sure all the Carrots are coated with the Seasonings, then spread the carrots evenly on the Baking Sheet making sure the carrots aren’t overlapping. Next, Let the Carrots Marinate for 20 Minutes on the Pan.

3. PreHeat Oven at 400 Degrees F. Roast the Spicy Carrots for 35 – 40 Minutes. Make sure the Carrots are Soft but Roasted on the Outside. Take out and Serve!
