Prep Time: 10 Minutes
Marinating Time: 15 Minutes
Oven Temperature: 350 Degrees Fahrenheit

Roasted Taco Purple Potatoes Ingredients:
1 Bag Purple Potatoes (1.5 Pounds or 24 Ounces)
2 Tablespoons Fresh Minced Garlic (about 2 Cloves)
3 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Lemon Juice
2 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
Roasted Taco Purple Potatoes Instructions:
1. First thing to do, prepare the Purple Potatoes for Marination. Start by cutting the Potatoes in half then put all the cut Potatoes in a Bowl. Next add Fresh Minced Garlic, Extra Virgin Olive Oil, Lemon Juice, Ground Cumin, Chili Powder, Salt and Black Pepper to the Bowl of cut Purple Potatoes.
2. Now Mix up all the Ingredients, we usually put the lid on and shake the Bowl really good. Next let the Bowl of Purple Potatoes and Taco Seasonings Marinate for at least 15 Minutes. This allows the Potatoes to soak up some of the Delicious Taco Marinade.
You will need a Baking Sheet with Parchment Paper (if you have a nonstick pan, then you might not need Parchment Paper). Poor all the Purple Potatoes and Marinade on the baking Sheet.
3. PreHeat the Oven at 350 Degrees F. Roast the Purple Potatoes for 15 Minutes. Then turn the Potatoes over and Roast for another 10 – 15 Minutes. Take the Potatoes out of the Oven and let cool Slightly. (The marinade will get dark on the pan, the Potatoes are not burnt!)
