Roasted Tex Mex Boneless Chicken Ingredients:
2.5 Pounds Boneless Chicken Thighs or Chicken Breasts
2 Tablespoons Fresh Minced Garlic (about 2 Cloves)
3 Tablespoons Lemon Juice
3 Tablespoons Extra Virgin Olive Oil
3 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
Roasted Tex Mex Boneless Chicken Instructions:
1. First, you will need a Baking Sheet. Arrange the Boneless Chicken evenly on the Pan.
TIP: We leave the Fat on the Chicken because it adds Juiciness, You can pull it off if you prefer!

2. Next, In a Bowl, Add Fresh Minced Garlic, Lemon Juice, Extra Virgin Olive Oil, Ground Cumin, Chili Powder, Salt and Ground Black Pepper. Mix up the Marinade really well, then Pour the Marinade over the Boneless Chicken Evenly. Now, Flip the Chicken Over to get Marinade on both sides, then Flip the Chicken back over. Make sure every Boneless Chicken is coated all over.
Marinate the Tex Mex Boneless Chicken for 20 Minutes!
3. PreHeat Oven at 375 Degrees F. Roast the Boneless Chicken for 20 Minutes. Then Turn the Chicken Over and Roast for 15 to 20 Minutes Longer. If you are using Boneless Chicken Breasts, you might need to Roast Longer because they are thicker.
When done, Take the Tex Mex Boneless Chicken out of the Oven and Serve how you want. Perfect for Fajitas, Wraps, Lettuce Wraps, Salads, Pasta, Rice or as a Main Dish!
