We give a Tex Mex Twist on a Classic Steak Fries Side Dish! Our Steak Fries (Jo Jo Fries) are Marinated and then Roasted to a crispy outside and a Soft inside then dipped into our Greek Yogurt Jo Jo Sauce! Sometimes we even Grill these up on our Barbecue in the Summer! Oven Roasting Time: 45 – 55 Minutes
Serves 4
Roasted Tex Mex Steak Fries Ingredients:
6 – 8 Medium Sized Potatoes
4 – 6 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Lemon Juice
3 Teaspoons Ground Cumin
1 1/2 Teaspoon Chili Powder
2 – 3 Teaspoons Salt
1 Teaspoon Ground Black Pepper
Jo Jo Sauce
1 Cup Greek Yogurt
1/2 Cup Ketchup
TIP: Traditionally Jo Jo Sauce is made with Mayonnaise (we don’t eat Mayo), but we use Greek Yogurt because it is Healthier and Delicious!
Roasted Tex Mex Steak Fries Instructions:
1. First Thing to do, Cut the Potatoes in to Thick Wedges. If the Potato is Smaller, just cut it in half length wise and then cut the Halves in Half. If the Potato is Bigger, cut the Potato in half and then each Half into 3 Slices. Then Put the Potatoes in a Bowl for next step!
2. Now in the Bowl with Potato wedges, add Extra Virgin Olive Oil, Lemon Juice, Ground Cumin, Chili Powder, Salt and Black Pepper. Mix the Ingredients and Potatoes really well until all the Potatoes are coated with the Marinade, Let rest for about 10 Minutes.
3. Now on a Baking Sheet with Parchment Paper (or a nonstick sheet), put all the Potatoes and Marinade on the Baking Sheet and spread the Potatoes so they don’t overlap.
4. PreHeat Oven at 400 Degrees F. Roast the Steak Fries for 45 – 55 Minutes, making sure to flip the Potatoes over at least once during the Roasting. When the Roasted Tex Mex Steak Fries are done, they will be soft in the middle and Crispy and Brown on the Outside. Take them out and let cool for a few Minutes.
Prepare the Jo Jo Sauce by mixing the Greek Yogurt and Ketchup together, then serve!
