Prep Time: 20 Minutes

Taco Meat Twice Baked Potatoes Ingredients:

6 – 8 Red Potatoes (You can also use Idaho Potatoes)
1 Pound Ground Turkey (You may use Ground Beef but it will add more Grease)
1 Small Onion
1 Green Bell Pepper
3 Tablespoons Fresh Minced Garlic (About 3 Cloves)
3 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
2 Tablespoons Extra Virgin Olive Oil
2 Cups Cheddar Cheese Shredded

Taco Meat Twice Baked Potatoes Instructions:

1. First thing to do, Bake the Potatoes in the Microwave or in the Oven until they are done. Set Aside to Cool.

2. In a Oven Safe Pan or a Skillet, add Ground Turkey, Chopped Onions, Chopped Green Bell Pepper, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt, Ground Black Pepper and Olive Oil. Mix up all the Ingredients in the Pan.

3. PreHeat the Oven at 375 Degrees F. Cook the Ground Turkey Taco Ingredients for 35 – 40 Minutes. When the Taco Meat is done, set aside until the Next Step.

TIP: At this Point, You can cook these ingredients on the Stove Top. We prefer to use the Oven for Convenience! 

4. Now you will prepare the Potatoes, You will need a Baking Sheet with Parchment Paper (if you have a nonstick pan, you might not need Parchment Paper). Then cut each Potato in Half and Scoop out the Potato Meat and Put it in the Pan of Cooked Taco Meat, We like to leave a layer of Potato Meat on the Skin for a Meatier Texture.

5. Next Mix up the Potatoes and Taco Meat, Make sure not to Over mix, the Chunkier the Ingredients, the Better!

6. Now start filling the Potatoes with the Taco Meat and Potato Mixture. Place each filled Potato on the Baking Sheet.

7. Preheat the Oven at 400 Degrees F. Now Sprinkle the Shredded Cheddar Cheese on top of Each of the Potatoes. Bake for 20 – 25 Minutes then Take out of the Oven and Let Cool Slightly. These are Delicious as a Dinner or a Side Dish!
