Prep Time: 15 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Baking Time: 35 – 40 Minutes
Serves 6 – 8

Twice Baked Kale Potatoes Ingredients:
6 Russet Potatoes (any Potato will work)
4 Cups Fresh Chopped Kale
1 1/2 Cups Sour Cream
3 Tablespoons Fresh Minced Garlic (about 3 Cloves)
3 Teaspoons Ground Cumin
2 Teaspoons Chili Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
1 – 2 Cups Shredded Cheddar Cheese
Twice Baked Kale Potatoes Instructions:
1. First, you will need to Cook the Potatoes. We usually cook them in the Microwave but you can also Bake them in the Oven. Bake the Potatoes just enough that they are soft but not Squishy. Let Cool a Little. Then Cut the Potatoes in Half and Scrape out the Potato Meat in to a Bowl. Make sure to Leave a Layer of Potato Meat on the Potato Skin. Put the Potatoes on a Baking Sheet with Parchment Paper.
2. Next, In the Bowl with the Potato Meat, Add Chopped Kale, Sour Cream, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt and Black Pepper.
3. Now, Mix up the Ingredients really well. Then start scooping the Potato Mixture in to the Potato Skins filling the Potatoes to the top.
4. PreHeat Oven at 375 Degrees F. Next, Sprinkle the Cheddar Cheese on Each Stuffed Potato. Some Cheese will fall off on to the Parchment Paper but it will not stick. The Cheese Crisps are an extra treat! Bake for 35 – 40 Minutes until the Cheese is Golden Brown. Take out of the Oven and Serve!
