Delicious, Simple Pasta Salad and Vegetables Sweetly marinated with Balsamic and Garlic! Perfect for a Barbecue or Party, this pasta will not spoil if left out too long!
Pasta salad is always a great side to serve, especially for cookouts and Family Gatherings! The longer this Pasta Salad marinates, the more flavor! We wanted to make this Salad as easy as possible but with better ingredients and more flavor! We chose to use Bell Peppers and Onions because they hold up after marinating and still have that fresh vegetable crunch!
Years ago, this salad was something we would throw together for a cookout but we would use Salad Dressing! After many years of experimenting and trying out real ingredients and NOT using store bought condiments, our Simple and Delicious Pasta Salad was created! We try really hard to use the least amount of processed ingredients as possible! So whip up a Bowl and take it to your next PARTY!

Prep Time: 30 Minutes
Refrigerator Marinating Time: 2 – 3 Hours
Serves 6-8 People
Balsamic Pasta Salad with Peppers and Garlic Ingredients:
16 Ounces Rotini Pasta (also called Corkscrew Pasta)
1 Green Bell Pepper
1 Yellow or Red Bell Pepper
1/2 Sweet Onion or 1 Small Sweet Onion
3 Tablespoons Fresh Minced Garlic
1/3 Cup Balsamic Vinegar
1/2 Cup Extra Virgin Olive Oil
1 – 2 Teaspoons Salt
1 Teaspoon Black Pepper
Balsamic Pasta Salad with Peppers and garlic Instructions:
1. First thing to do is to prepare the Pasta Noodles. Boil the Pasta Noodles until Al Dente, not mushy or chewy! When Pasta is done, immediately drain the noodles and rinse them with cold water. (This helps the cooking process to stop and prevents the noodles from sticking to each other.) Put the pasta in a Bowl with a lid and put them in the refrigerator to cool!
2. Now it’s time to prepare the vegetables. Thinly slice up a 1/2 Large Sweet Onion (if you have a small Sweet Onion, slice all of it.) Try to keep the length about noodle size, it’s easier to eat! No need to be perfect with cutting, it tastes delicious!
3. Slice up the Green and Yellow peppers the same way, thinly sliced then cut the slices in half. (You can dice your vegetables as well if preferred, we like them this way for easy pasta vegetable fork pickup! Also the Marinade really soaks in to the thinner sliced vegetables!)
4. Add all sliced Vegetables to the Bowl of Cold Pasta. For the Marinade, you will need a measuring cup or bowl. Add Balsamic Vinegar, Olive Oil and Garlic. Mix thoroughly then poor over the Pasta Vegetable mixture.
5. Add Salt and Black Pepper, then gently mix pasta, making sure all ingredients are mixed well!
Cover the bowl and Refrigerate for 2 – 3 Hours before serving. (The Balsamic marinade needs time to soak in to the Pasta and marry all the flavors together!)
After 3 Hours, the pasta and vegetables have had time to soak up all the delicious Balsamic and Garlic Marinade!
