Twice Baked Potatoes filled with Broccoli and Cheese make this side Dish a Delicious addition to any Dinner or serve them as an Appetizer!
Potatoes are an ingredient that you can do many different things with and we always have them around for different uses! Using Broccoli in the filling is a great way to get your Family to Eat Broccoli! This recipe came about because we had leftover Broccoli, so we added them in the filling and it became a family favorite Twice Baked Potatoes! We think keeping everything chunky gives the Potato a meatier taste and texture.

Prep Time: 30 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Baking Time: 20 Minutes
Broccoli Cheese Twice Baked Potatoes Ingredients:
6-8 Potatoes (Depending on the size of them!)
2 Cups Cooked Broccoli (Frozen or Fresh Broccoli can be used, we used Frozen in this one.)
3 Tablespoons Fresh Minced Garlic
3 Tablespoons Extra Virgin Olive Oil
1 Teaspoon Salt
1 Teaspoon Black Pepper
1 Cup Shredded Cheddar Cheese
Broccoli Cheese Twice Baked Potatoes Instructions:
1. First thing to do is Cook the Potatoes. You can Bake them in the Oven (this will take longer) or Bake them in the Microwave. Let cool for at least 15 to 20 minutes so you don’t burn your hands!
This is also a great time to cook the Broccoli. We don’t want the Broccoli to mushy, so cook them until a Fork can go through them.
2. Now you will need a Baking Sheet with some Parchment Paper (this is so the cheese doesn’t stick to the pan!) Slice the Potatoes in Half long way, then start scooping the Potato meat out and put it in a Bowl.
TIP: We leave a layer of potato left on the skin, so they don’t fall apart!
3. After all the Potatoes have been scooped out, then add Garlic, Olive Oil, Salt, Pepper and Chopped Broccoli in the same bowl. Gently Mix. (The Potatoes and Broccoli should still be chunky not mashed!)
Start Filling the Potato Skins and placing them on the Baking Sheet.
4. Preheat Oven at 375 Degrees F.
Sprinkle 1 cup of Cheese evenly over the top of the filled potatoes.
Bake for 20 Minutes or until the cheese is melted the way you want it!
