Prep Time: 15 Minutes (if you are Baking Potatoes in the Oven, that will take longer)
Oven Temperature: 400 Degrees Fahrenheit
Roasting Time: 40 – 45 Minutes
Serves 4 – 5

Cheesy Smashed Red Potatoes Ingredients:

4 – 5 Medium Red Potatoes
2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Fresh Minced Garlic (about 2 Cloves)
2 Teaspoons Ground Cumin
1 Teaspoon Salt
1 Teaspoon Ground Black Pepper
1 1/2 Cups Shredded Cheddar Cheese

Cheesy Smashed Red Potatoes Instructions:

1. First, you will Bake the Red Potatoes either in the Microwave or in the Oven wrapped in Foil. When the Red Potatoes are done, set them aside to cool. Next, in a Bowl, add Extra Virgin Olive Oil, Fresh Minced Garlic, Ground Cumin, Salt and Black Pepper. Mix up the Ingredients and then pour the Marinade on a Baking Sheet with Parchment Paper, Evenly Spread the Ingredients on the Sheet.

TIP: We like to put the Marinade on the Pan, then Smash the Red Potatoes in to it, Delicious!

2. Now, you need to Cut the Red Potatoes in to 4 Chunks and put them on the Baking Sheet with the Garlic Marinade. Next, with a Potato Masher or a Fork, Smash the Red Potatoes, you don’t need to Flatten the Potatoes, just Smash Not Mush them.

3. PreHeat the Oven at 400 Degrees F. Finally, Sprinkle the Shredded Cheddar Cheese on Top of all the Smashed Red Potato Chunks. Roast in the Oven for 40 – 45 Minutes or until the Cheese is really Crispy. You will Notice, The Melted Cheese married the Marinade and Potatoes together, So Delicious!

I have been cooking since I was around 12 but I was helper since 8 or 9! I spent time in the kitchen with my mom and twin sister cooking and baking from scratch almost everyday. I grew up in a 6 people family on a budget but that doesn't mean we didn't eat good! Even though, I branched out when I had my own family with my cooking skills, cooking is in my blood! My husband of over 20 years is my inspiration to cook up different things and experiment with seasonings because I love to hear him say "MMMMM, that's so good"! He also is my helper and I love it!
