Cheesy Tex Mex Purple Potatoes Ingredients:  

1 Bag Purple Potatoes (1.5 Pounds)
2 Tablespoons Fresh Minced Garlic (about 2 cloves)
3 Tablespoons Extra Virgin Olive Oil
2 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
1 Teaspoon Salt
1 Teaspoon Ground Black Pepper
1 Cup Shredded Cheddar Cheese

Cheesy Tex Mex Purple Potatoes Instructions:

1. First, you will need a Bowl for Marinating. Next Cut all the Purple Potatoes in Half and put them in the Bowl. Add Fresh Minced Garlic, Extra Virgin Olive Oil, Ground Cumin, Chili Powder, Salt and Ground Black Pepper.

2. Mix up the Purple Potatoes with all the Ingredients, Then put the Lid on and Let Marinate for 20 Minutes. After the Purple Potatoes are Marinated, You will need a Nonstick Baking Sheet (or put Parchment Paper on the Baking Sheet so nothing Sticks). 3. PreHeat the Oven at 350 Degrees F. Roast the Tex Mex Purple Potatoes for 20 – 25 Minutes. When the Potatoes are done Roasting, Take them out of the Oven and Sprinkle Cheddar Cheese over the Top of the Potatoes. Put the Cheesy Tex Mex Purple Potatoes back in the Oven and Roast for 10 More Minutes until the Cheese is Melted. Then Take out of the Oven and Serve!
