Cheesy Vegetarian Oven Baked Potatoes Ingredients:
4 – 5 Medium Potatoes
2 Tablespoons Extra Virgin Olive Oil
2 Small Green Bell Peppers (or 1 Big Green Pepper)
1 Small White Onion (or 1/2 Big Onion)
1/2 Cup Butter Melted
1/2 Teaspoon Salt
1/2 Teaspoon Ground Black Pepper
2 Cups Cheddar Cheese
Cheesy Vegetarian Oven Baked Potatoes Instructions:
1. First, you will need to Bake the Potatoes in the Microwave or in the Oven until Done. Next, In a Nonstick Casserole Pan or a Baking Sheet, Add the Extra Virgin Olive Oil to the Pan and Spread evenly. Cut the Potatoes in Half Lengthwise and put them on the Pan. With a Fork, Poke Holes on top of the Potatoes. Now, Pour the Melted Butter on top of each Potato.
2. Next, Cut the Green Bell Peppers and Onions in to Long Strips so they will lay on top of the Potatoes. Add the Onions on top of the Potatoes, then Add the Green Bell Peppers on top of the Onions. Now, Sprinkle the Salt and Ground Black Pepper on top of the Vegetables. Then Sprinkle the Cheddar Cheese on top of the Vegetables on the Potatoes.
3. PreHeat Oven at 375 Degrees F. Bake the Potatoes for 30 – 35 Minutes or until the Vegetables are Slightly Soft and the Cheddar Cheese is Brown.
