Chicken Fajitas Marinated and Baked with Flavors of TexMex, Lemon and Cilantro!

We have been experimenting with different combinations of flavors with these delicious Chicken Fajitas for over two years! They are now a family favorite and have combos of flavors that make these Fajitas a simple, delicious meal idea. The marinated flavors have married together and give a tender full of flavor Chicken Fajita meat! Baking the Fajita meat separately from the Bell Peppers and Onions allow  fully tender Chicken Strips and vegetables that are not mushy and taste so fresh!

Prep Time: 20 Minutes
Chicken Fajita Meat Marination: 30 Minutes
Chicken Fajita Meat Bake Time: 55 Minutes
Fajita Vegetables Bake Time: 25 – 30 Minutes
Oven Temperature: 350 Degrees Fahrenheit
Serves: 4 People (about 2-4 Fajitas each)

Cilantro Lemon Chicken Fajitas:

4 Chicken Breasts
2 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Lemon Juice
2 Tablespoons Minced Garlic
4 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
1/2 Teaspoon Cayenne
1/2 Teaspoon Ground Black Pepper
1 Teaspoon Salt
2 Tablespoons Fresh Cilantro
3 Bell Peppers
1 Onion
10-12 Flour Tortillas

Chicken Fajita Instructions:

1. First thing to do is to prepare the Chicken Fajita Meat.
We take the raw chicken breasts and slice them up. Making sure you slice against the grain, this helps the chicken break apart easily when eating the cooked chicken in fajitas.

2. Put the sliced up Chicken breasts in a bowl and add Olive Oil, Lemon Juice, Minced Garlic, Ground Cumin, Chili Powder, Cayenne, Black Pepper and Salt! Mix it up and set it in the refrigerator, covered, to marinate for at least 30 Minutes.

TIP:

Do Not Cut Raw Meat and vegetables on the same cutting board, unless you have thoroughly washed and sterilized the cutting board!

3. Usually at this time, we prep the vegetables. Slice up the Bell Peppers and Onions long way and put them in the pan it will cook in. Add 1 Tablespoon of Olive Oil, 1 Teaspoon Salt, 1/2 Teaspoon of Black Pepper, mix up and set aside!

4. When Chicken is done marinating, PreHeat oven at 350 Degrees F. Put all the chicken and marinade in a pan to cook in, than Bake for 25 Minutes!

5. After 25 Minutes, Check the Chicken Fajita meat and stir it around, making sure to coat the chicken in the liquid. (There will be a lot of liquid, DO NOT DRAIN, it will absorb!)
Leave the Chicken in the oven and put the pan of Bell Peppers and Onions in the Oven.
Cook for 25 Minutes, make sure to stir the vegetables and the chicken at least once during this cooking time!

6. When Chicken is done, most of the liquid will have soaked in to the chicken and has created a little bit of sauce. Add Cilantro to Chicken and Mix! (We highly recommend Cilantro, the flavor tastes authentic to Mexican flavored dishes!)
The Bell Peppers and Onions are done when a fork can pierce through but it still is a little firm! (We don’t like mushy Vegetables!)

7. Time to make Fajitas! Take Flour Tortillas, add Chicken Fajita Meat, Fajita Vegetables and your favorite Toppings or eat them just with Chicken Fajita Meat and Vegetables, the flavor is so delicious, you don’t need toppings!
If you love toppings than we suggest Avocado, Cheese and Lettuce Topped off with our Delicious Sour Cream Garlic Sauce!

Our goal with these absolutely delicious Chicken Fajitas was to keep them fresh and full of authentic Mexican flavors! We don’t make our own flour tortillas, yet, but we wanted to keep these simple without lacking flavor! These are a family favorite and a crowd pleaser!
