Our Seasoned Brown Rice married with Sweet Balsamic Carrots is a Side Dish we make a lot! We like to serve it as a Side or a Meal in itself. The flavors of Garlic, Balsamic Vinegar and Seasonings blend very well, making this Dish a Family Favorite! This dish was inspired by several of our other Recipes like our Balsamic Roasted Carrots and our Collard Greens With Garlic Brown Rice! Prep Time: 20 Minutes
Brown Rice Cooking Time: 45 Minutes
Oven Temperature For Carrots: 375 Degrees Fahrenheit
Roasting Time: 35 Minutes
Serves 4 – 6
Roasted Sweet Carrots With Garlic Brown Rice Ingredients:
2 Cups Brown Rice Dry
5 1/2 Cups Water
2 Tablespoons Chicken Bullion Paste (We use Better Than Bullion)
3 Tablespoons Fresh Minced Garlic (About 3 Cloves)
6 Carrots (Slimmer Long Carrots is what we use)
3 Tablespoons Balsamic Vinegar
3 Tablespoons Extra Virgin Olive Oil
1 – 2 Teaspoons Salt
1 Teaspoon Black Pepper
TIP: If you are using Canned Chicken Bullion, Replace the Water with the Bullion or do Half Water and Half Bullion!
Roasted Sweet Carrots With Garlic Brown Rice Instructions:
1. First thing to do, is Cooking the Brown Rice on the Stove Top. In a Pan with a Lid, add the Rice and Water. Then add the Chicken Bullion and Fresh Minced Garlic and mix thoroughly. Turn the Stove Top on to Medium and get the Brown Rice to a slight Boil, then turn down the Temperature to Low/Medium (our stove top is set to 2.8). Cover the Rice with the lid and Cook for 45 Minutes.
(Make sure to check the rice a couple of times because different Stove Tops cook differently!)
2. While the Garlic Brown Rice is Cooking, it’s a great time to Prepare the Carrots. You can just wash the Carrots or you can Peel them. You will need a Skillet Pan or Baking Sheet for the Oven. Start by cutting the Carrots in to about 1 Inch Chunks. Then add all of the Carrot Chunks to the Pan.
3. Turn the Oven on to 375 Degrees F. Next in the Pan of Cut up Carrots, add the Balsamic Vinegar, Extra Virgin Olive Oil, Salt and Black Pepper. Mix up thoroughly. Roast for 30 – 35 Minutes.
4. When the Brown Rice is done, set aside for Next Step. After the Roasted Sweet Carrots are done, it’s time to combine these Ingredients. Pour the Roasted carrots and all the marinade that is left from Roasting in the pan with the Garlic Brown Rice. Mix up thoroughly then serve! Simple and Full of Flavor!
