Sauteed Collard Greens and Garlic Brown Rice is the perfect side dish to any Meat dish! It is easy, delicious and very filling!
We have been making our Brown Rice with Collards side dish for a couple of years. There were a few different creations, but this is our favorite version that we eat a lot! It is served at least one time a week or more, it is that good! If there are leftovers, it will be someone’s lunch the next day! The Brown Rice stays soft and full of flavor. This dish can be a Vegetarian Meal or a Hearty Side Dish to Chicken, Beef, Fish or Sausages!

Brown Rice Cooking Time: 40-50 Minutes
Saute Collard Greens And Rice: 10 Minutes
Servings: 6-8 (My Family likes Large Portions, This Recipe Can be cut in Half if needed!)
Collard Greens With Garlic Brown Rice Ingredients:
2 Cups Brown Rice
5 Cups Water
5 Teaspoons Organic Better Than Bullion Chicken Base (We only use this Bullion for all our cooking, You can substitute Chicken Bullion for the Water.)
2 Tablespoons Fresh Minced Garlic
4 Tablespoons Extra Virgin Olive Oil
8 Ounces Fresh Chopped Collard Greens
1 Teaspoon Black Pepper
Salt to Taste (We don’t think this Rice needs too much Salt!)
Collard Greens With Garlic Brown Rice Instructions:
1. You will need a pan that has a lid for the Stove top. Add the Water and Brown Rice.
Tip: Brown Rice can be harder to cook than White Rice! We leave the water and Brown Rice (NO Seasonings) in the pan to soak for at least 20 Minutes before cooking! This helps soften the outer Grain layer of the Rice, so it cooks up soft NOT Crunchy!
2. After about 20 Minutes, Turn the Burner on Medium/High Heat, add Garlic and Chicken Bullion! Get it to a boil, then reduce the heat to Low/Medium and Cover with the Lid. Cook for 35 Minutes, then you will check it.
(If you are using Liquid Chicken Bullion, Drain the Brown Rice and Water from soaking, then add the Chicken Bullion and Garlic. Soaking the Brown Rice in just Water is important if you don’t like Crunchy Brown Rice!)

3. After 35 Minutes, Check the rice to see how it is doing. (Depends on how your Stove top cooks, depends on the cooking time for this rice!)
This is what is should look like, it is NOT done!
4. Cover with the lid again, cook for 15-20 more Minutes.
This is what soft, fully cooked Brown Rice should look like. It is not mushy or Crunchy!
5. Cover with lid and set aside.
Now you will need a pan that you can Saute in. (We use a Wok but you can easily use a Skillet Pan!)
Turn the Stove top heat to Medium/High, add Olive Oil, let the oil heat up a minute.
Now add the Collard Greens to the pan with Black Pepper and a little Salt (about 1 Teaspoon).

6. Saute the Collard Greens for about 7-10 Minutes. (You want the Greens to be reduced down and not look like Raw vegetables but Don’t over Saute, they will get mushy.)
They should look like this!
7. Turn off the heat, add the cooked Brown Rice and Mix! Serve as a Side Dish or as a Vegetarian Meal!

This is a healthier dish but you would not think so with the delicious, flavorful Brown Rice perfectly cooked and married with Sauteed Collard Greens, Yum! Our simple Side dish is served in our house, at least once a week with many meals! Here are a few of our Recipes, we serve this rice with, Oven Fried Chicken with Balsamic and Garlic, our Taco Lemon Baked Chicken or our Balsamic Cilantro Turkey Meatballs! Don’t forget about adding some Vegetable side dishes like Brussels Sprouts Sweetly Roasted and out Balsamic Roasted Carrots to make this a completely delicious meal!
