Roasted Tex Mex Carrots Ingredients:
6 – 8 Medium Carrots
5 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Fresh Minced Garlic (about 3 cloves)
3 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
Roasted Tex Mex Carrots Instructions:
1. First, you will need a Nonstick Baking Pan. Then Cut the Carrots in to 1/2 Inch Coins and put them on the Pan. Add Extra Virgin Olive Oil, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt and Ground Black Pepper to the Baking Sheet of Cut Carrots. 
2. Now, Mix up the Ingredients with the Carrots and Spread the Carrots out on the pan evenly, Don’t stack them on each other so they can Roast Evenly. Marinate for 15 Minutes on the Pan. 
3. PreHeat Oven at 375 Degrees F. After the Carrots have Marinated for 15 Minutes, Put them in the Oven and Roast for 35 – 40 Minutes, No need to turn over. The Carrots will be Roasted on the Outside and soft inside.
