Roasted Tex Mex Sweet Potatoes are Flavored with Fresh Garlic, Ground Cumin, Chili Powder and Red Pepper for some Heat, then Oven Roasted!

Prep Time: 15 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Roasting Time: 45 – 55 Minutes (Depending on how big or small you cut the Sweet Potatoes)

Roasted Tex Mex Sweet Potatoes Ingredients:

4 Medium Sweet Potatoes Peeled
3 Tablespoons Fresh Minced Garlic (about 3 Cloves)
5 Tablespoons Extra Virgin Olive Oil
2 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
1/2 Teaspoon Ground Red Pepper
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper

Roasted Tex Mex Sweet Potatoes Instructions:

1. Frist, you will need a Baking Sheet with Parchment Paper or a Non-stick Baking Sheet. Next, Cut the Sweet Potatoes in to about 1 inch Cubes and put them on the Baking Sheet. Add Fresh Minced Garlic, Extra Virgin Olive Oil, Ground Cumin, Chili Powder, Ground Red Pepper, Salt and Ground Black Pepper to the Baking Sheet of Sweet Potatoes.

2. Now, Mix up all the Ingredients so that all the Sweet Potato Chunks are covered with the Seasonings. Spread the Sweet Potatoes out on the Baking Sheet, Making sure the Potatoes are not on top of Each Other.

3. PreHeat Oven at 375 Degrees F. Put the Sweet Potatoes in the Oven and Roast for 30 – 40  Minutes. Then Flip all the Sweet Potatoes Over and Roast for another 15 Minutes. Depending on how Big or Small you cut the Sweet Potatoes will determine if you need that extra 10 Minutes, Just check them with a Fork, if they poke through, then the Sweet Potatoes are Ready to Flip and Roast again.
