Ground Turkey, Rice and Cheese Saucy Burritos!
Saucy Burritos or Wet Burritos are similar to Enchiladas! Our recipe is one we have been making for years but we experimented with lots of flavors and spices and this recipe is our favorite when we want a Mexican style casserole dish! We wanted to make our Saucy Burritos simple and not as many ingredients but with all the flavor! If you have tried our Family Favorite Tacos, than you definitely will love this Saucy Burrito recipe. Our slightly spicy sauce is our fast and easy blender Simple Enchilada Sauce! You will not believe how easy it is to make your own sauce for this dish and the best thing is, you can freeze the rest of the sauce for another meal! (We never have any left because we like sauce, Lol!)
We usually double or triple our recipe and if there is any Saucy Burritos left, it’s a perfect lunch for the next day!

Prep Time: 1 Hour (our prep time is less than 30 minutes, but we know our recipes very well)
Bake Time: 30 Minutes
Oven Temperature: 350 Degrees Fahrenheit
Serves 4
Saucy Burritos:
1 Pound Ground Beef, Chicken, Turkey (we usually use ground turkey)
1 Tablespoon Olive Oil (if you use Chicken or Turkey, Oil is needed to add some fat)
2 Tablespoons Fresh Garlic (you can substitute 1 tsp Garlic seasoning, but fresh garlic is better!)
1 – 2 Tablespoons Ground Cumin
1/2 Teaspoon Chili Powder (if you like more spice, add more!)
1/8 Teaspoon Cayenne Powder
1/4 Teaspoon Ground Black Pepper
1 Cup Chicken Bullion
1 Cup Cooked Brown Rice
1 Onion Chopped
1 Green Pepper Chopped
10 Flour Tortillas
1/2 – 1 Cup Cheddar Cheese (depending on if you love cheese like we do!)
2 Cups Enchilada Sauce

Saucy Burrito Instructions:
1. We make our Simple Enchilada Sauce first and than set it aside. Click link for instructions for this delicious sauce!
2. Next is browning the ground turkey. We use a frying pan on the stove-top set to medium temperature with Olive oil. You will need to break up the meat as it’s cooking. The meat needs to brown until you see dark crusts forming on the meat (this method adds a lot of flavor similar to ground sausage without the grease)!
3. The browning is done, now the seasonings! Add fresh Garlic, Cumin, Chili powder, Cayenne and Pepper over browned meat. Stir it for a minute making sure all the seasonings are coating the meat! Now add 1 Cup of Chicken Bullion and let simmer for 20 minutes. The flavors will simmer into the meat along with the bullion.
4. This is a good time to prepare the rice. Before you cook the rice, we chop up the onions and green peppers so they can cook in with the rice! Cook rice according to the instructions with just the vegetables, no seasonings! (we use Brown or Wild Rice, this requires a little bit more time to cook).
5. After the rice is fully cooked and the meat has simmered for at least 20 minutes, than mix the rice into the meat and mix thoroughly!
6. Now you will need a casserole dish or a pan with sides, put enough Enchilada Sauce to cover the bottom of pan (this makes the flour tortillas soak up the sauce and prevent the burritos from sticking). Than put a little bit of cheese and a couple of spoonfuls of burrito filling in a flour tortilla, fold and put face down in the pan like this!
7. Repeat this step until all ingredients are gone, this should make about 10 to 12 burritos (we doubled our recipe and did 20 burritos). Now scoop the Enchilada Sauce over all the burritos making sure all is covered (we want these wet not dry burritos)! Sprinkle the cheese over the top evenly.
Preheat Oven at 350 Degrees F. than Bake for 30 Minutes or if you want crispier cheese, leave in a little longer!

Our wet burritos have simple ingredients but the flavors that marinated through out the casserole makes this dish another one of our favorites!
