Slow Cooker Lentil Potato Stew is made with Lentils, Fresh Garlic, Cumin, Chili Powder and Chunks of Potatoes then Slow Cooker for a Creamy Chunky Stew!

Slow Cooker Meals are one of our Favorite, Easy Dinners! This one is our Lentil Stew loaded with Tex Mex Seasonings and lots of Chunky Potatoes! Lentils are Full of Protein and are very Filling when Slow Cooked to e Creamy Stew! We call this a Stew and Not a Soup because it is Thick and Creamy like a Beef Stew! Slow Cooker Lentil Potato Stew Ingredients:

16 Ounces Dry Lentils
6 Cups Water
6 Teaspoons Chicken Bouillon (We use Better Than Bouillon)
4 Tablespoons Fresh Minced Garlic (about 4 Cloves)
4 Teaspoons Ground Cumin
2 Teaspoons Chili Powder
1 Teaspoon Ground Black Pepper
5 Medium Potatoes

Slow Cooker Lentil Potato Stew Instructions:

1. First, you will need to Soak the Dried Lentils in Water for 1 Hour. In a Slow Cooker, Add Soaked, Drained Lentils, Water, Chicken Bouillon, Fresh Minced Garlic, Ground Cumin, Chili Powder, Ground Black Pepper and Potatoes Cut in to about 1 Inch Cubes. Stir the Ingredients until Mixed. 

TIP: If you are using Canned or Boxed Bouillon, Add 6 Cups. Do not add Water or Chicken Bouillon Paste.

2. Put the Lid on the Slow Cooker. Slow Cook for 5 1/2 – 6 Hours or Until the Potatoes are done and Lentils are Creamy.
