Prep Time: 15 Minutes
Slow Cooker Temperature: High
Cooking Time: 7 – 8 Hours (4 Hours Beans Only, 3 – 4 Hours with all Ingredients)
Slow Cooker Sausage Black Eyed Peas Ingredients:
16 Ounces Dried Black Eyed Peas
6 Cups Water
2 Tablespoons Better Than Bouillon (we use Chicken Flavor)
3 Tablespoons Fresh Minced Garlic (about 3 Cloves)
2 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
1 Teaspoon Ground Black Pepper
12 – 13 Ounces Smoked Sausage
Slow Cooker Sausage Black Eyed Peas Instructions:
1. First, you need to soak the Black Eyed Peas overnight or for at least 2 Hours, then Drain and Rinse them. Add the Bean to the Slow Cooker with 6 Cups of Water. Turn the Cooker on High, let Cook for 4 Hours to soften the Beans, Do not add the Ingredients yet.
TIP: If you are using Canned Black Eyed Peas, Use 4 – 15 Ounce Cans and Skip to Instruction number 2. If you are using Boxed or Canned Bouillon, Omit the Water and skip to Instruction number 2 but don’t use to cook the Dried Beans, the Salt will make the Beans Crunchy.
2. After the Black Eyed Peas and Water have Cooked for 4 Hours, It’s time to put in the Ingredients. Add Better Than Bouillon, Fresh Minced Garlic, Ground Cumin, Chili Powder, Ground Black Pepper and Sliced Smoked Sausage cut into about a 1/4 inch Coins to the Slow Cooker.
3. Now, Mix up the Ingredients in the Slow Cooker and then Put the Lid on, Make sure the Slow Cooker is set to High Temperature. Slow Cook for 3 – 4 More Hours. Check after 3 Hours to see if the Beans are done, if not add another Hour. The Consistency will be thicker and not Watery.
