Taco Seasonings and Lemon Marinated Into The Chicken and then Baked! It Creates Juicy Chicken That Falls Off The Bone!
Our Taco Lemon Chicken is melt in your mouth delicious! We love serving this baked chicken with brown rice with some of the broth from the pan. It is a simple but very flavorful Chicken dinner! Our Family Favorite Tacos and Cilantro Lemon Chicken Fajitas were the inspiration for this delicious meal. Our Chicken recipe is almost like eating Chicken Fajitas without the tortilla. A lighter meal with healthier ingredients and it is Family Approved!

Marinate Chicken Time: 40 Minutes
Bake Chicken Time: 1 Hour 15 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Taco Lemon Baked Chicken:
8 Chicken Thighs, Chicken Legs or Boneless Chicken (we love Bone-In Chicken Thighs for this recipe!)
1 Cup Chicken Bullion (we always use Organic Better Than Bullion Chicken Base)
3 Tablespoons Lemon Juice
2 Tablespoons Fresh Minced Garlic
2 Tablespoons Ground Cumin
1/2 Teaspoon Chili Powder
1/4 Teaspoon Cayenne
1/4 Teaspoon Black Pepper
Tip: If you are using Boneless Chicken, Reduce Baking time by at least Half, about 45 Minutes!
Taco Lemon Baked Chicken Instructions:
1. First thing to do is to pull the skin off the Chicken. (You can leave the skin on the Chicken, our preference is Skinless, it’s healthier!)
You will need a bowl to put the Raw chicken and Ingredients in for Marinating.
(We usually use Fresh Minced Garlic from a jar, But we had some Garlic cloves lying around, so in the Marinade they went!)
2. Now add Chicken Bullion, Lemon Juice, Garlic, Cumin, Chili Powder, Cayenne and Black Pepper. Shake the chicken and marinade up really well with lid on!
Marinate for at least 40 Minutes. (You can marinate longer if desired.)
3. After Marination, you will need a baking pan for the Chicken.
PreHeat Oven at 375 Degrees F.
Add Chicken and ALL the Marinade to Baking Pan. (There is a lot of liquid, but it will condense down during cooking!) It will look like this!
4. Bake for 30 Minutes, then it is time to flip the chicken over.
The liquid has condensed by half at this point.
5. Bake for another 30 Minutes.
Then flip the Chicken over again. (The liquid will be reduced even more!)
Bake for 15 Minutes longer to Brown the top.
