Turkey Meatloaf with Taco Flavors Stuffed in Bell Peppers with Crispy Cheese on Top! This twist on Meatloaf will give new life to a Classic Dish!

We like Stuffed Bell Peppers and we have come up with many different ways of Cooking with them! Meatloaf is a quick Easy Home cooked Meal that is filling and can be made with many different Ingredients. We decided to experiment by putting the Taco Turkey Meatloaf in the Bell Pepper and Baking it! This created a whole new way to enjoy Meatloaf! Prep Time: 20 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Baking Time: 45 – 55 Minutes 
Melting Cheese on Top: 10 – 15 Minutes (Depends how you like your Cheese, we Love Crispy Cheese!)

Stuffed Bell Peppers Baked with Meatloaf

Taco Turkey Meatloaf Stuffed Bell Peppers Ingredients:

4 Green Bell Peppers
2 Pounds Ground Turkey
2 Eggs

4 Tablespoons Fresh Minced Garlic (About 4 Cloves)
2 Teaspoons Ground Cumin
1 Teaspoon Chili Powder
2 Teaspoons Salt
1 Teaspoon Ground Black Pepper
1 1/2 – 2 Cups Whole Oats Oatmeal
1 Cup Shredded Sharp Cheddar Cheese (You can put More or Less Cheese, Depends on your Taste!)

TIP: You can put the Cheese in the Meatloaf Mixture instead if you Prefer!

Taco Turkey Meatloaf Stuffed Bell Peppers Instructions:

1. First thing to do is to prepare the Bell Peppers. Cut the Peppers in half from stem to bottom. Clean out all the seeds and wash them. Place all the Bell Peppers on a Baking Sheet with Parchment Paper. (We use Parchment Paper so food doesn’t stick to the Pan, if you have a good nonstick Pan, you might not need to line it.)

2. Next, is to prepare the Turkey Meatloaf. In a Bowl, add Ground Turkey, Eggs, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt, Black Pepper and Oatmeal. Mix up really well.

TIP: Put Olive Oil on your Hands before mixing the Meatloaf to prevent sticking to your Hands!

3. Now start Stuffing the Bell Peppers with the Taco Turkey Meatloaf. Make sure to press the Meatloaf in. Use all the Meatloaf Mixture, these will be over stuffed Bell Peppers.

4. Preheat Oven at 375 Degrees F. Bake the Taco Turkey Stuffed Bell Peppers for 45 – 55 Minutes. (To make sure these are done, pierce the Bell Peppers with a Fork, they should be softer. This is Ground Turkey, so they need to be Fully Cooked.)

5. Take the Bell Peppers out of the Oven then Sprinkle Sharp Cheddar Cheese on Top. Some of the Cheese will Fall to the Pan, but the Parchment Paper doesn’t allow the Cheese to stick. If you like Crispy Cheese, you will Love these! Bake at 375 Degrees F for 10 – 15 Minutes.

Tip: If you like less cooked Cheese, Bake these for 7 – 10 Minutes.
