Tex Mex Kale Spaghetti Ingredients:

16 Ounces Dried Spaghetti
8 Cups Fresh Chopped Kale
1/4 Cup + 6 Tablespoons Extra Virgin Olive Oil
4 Tablespoons Fresh Minced Garlic (about 4 cloves)
4 Teaspoons Ground Cumin
2 Teaspoons Chili Powder
3 Teaspoons Salt
2 Teaspoons Ground Black Pepper 

Tex Mex Kale Spaghetti Instructions:

1. First, you need to prepare the Kale. You will need a Baking Sheet, Next Add Chopped Fresh Kale, 6 Tablespoons Extra Virgin Olive Oil, Fresh Minced Garlic, Ground Cumin, Chili Powder, Salt and Ground Black Pepper to the Baking Sheet. Mix all the Ingredients together and spread the Kale evenly on the Pan. Marinate for 20 Minutes.

2. PreHeat the Oven at 375 Degrees F. After the Kale has Marinated, Roast the Kale for 20 Minutes. At this time, Cook the Spaghetti according to the Instructions.

3. Next, When the Spaghetti is done, Drain the water out and put the Pasta in a Pan. Add 1/4 Cup of Extra Virgin Olive Oil and the Roasted Tex Mex Kale to the Pan of Pasta. Mix up the Spaghetti really good, making sure the Seasonings coat the Pasta. Let sit with a lid on for about 10 minutes. This gets all the flavors Marinating in to the Pasta.
