Banana Bread so moist it is like cake! We use less sugar and this bread still satisfies your sweet tooth!
Banana bread is usually made around here when we had to freeze our over ripe bananas (my family won’t eat a brownish banana, lol) and those bananas turn into bread! Over the years, we have tried many banana bread recipes but something was always missing, Moistness! This banana bread recipe we created a few years ago, is moist and delicious with less sugar! Our Pumpkin Cake Bread was our inspiration, so we experimented with ingredients and this is our favorite banana bread now! It is even better and melt in your mouth delicious banana bread the next day!

Oven Temperature: 350 Degrees Fahrenheit
Makes 2 Loaves
Banana Bread Cake:
2 Cups White Flour or Half White and Half Wheat (try not to use bleached or enriched white flour, we like King Arthur Flour )
1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 1/4 Teaspoons Cinnamon
1/4 Teaspoon Nutmeg
3 – 4 Ripe Bananas (we usually use bananas that have been frozen than unthawed)
1/2 Cup Pure Cane Sugar (we prefer less sugar but you can make it sweeter!)
3/4 Cup Butter Melted (we have only used real butter NOT margarine)
2 Eggs
Banana Bread Instructions:
1. You will need 2 bowls, one is for dry ingredients and the other is for wet ingredients. Now add the Flour, Baking Soda, Baking Powder, Salt, Cinnamon and nutmeg in a bowl than make sure the ingredients are mixed well, set aside!
2. In the other bowl, you will add Sugar, Melted butter and bananas. ( If you are using a mixer like me than mixing time will be around 1-2 minutes, or hand mix until well blended)
3. Now add the eggs to the wet ingredients and mix until blended. The bananas are slightly chunky (we like it that way) but if you want the bananas to be smoother, just mash them really good.
4. Now add the mixed dry ingredients in the bowl and gently sir it in or mix on low speed on your mixer, just till blended. (If you do over mix, the bread will be flatter but still good but in order to get the moist cake texture, don’t over mix!) It should look like this.
5. Preheat the Oven to 350 Degrees F, than butter 2 loaf bread pans (we use butter because the bread won’t stick, some sprays might stick). Now divide the Banana bread batter evenly into the 2 loaf pans, than smooth the top a bit so the batter covers the bottom of the pan like this. (Our pans are not the same size, so we accommodate that when dividing the Banana bread batter.)
6. Bake for 30 Minutes than check the center with a toothpick to make sure it is not doughy. If it isn’t done, leave them in the oven for about 3-5 minutes. Than take the loaves out and let them cool a bit. No butter needed but who can resist fresh banana bread out of the oven!
