Potato Skins are a Simple and Delicious Side Dish or Appetizer! We love to make them a little Spicy with Jalapenos and some Onion for some extra flavor with Lots of Cheese!
Potato Skins are an Easy and Delicious Appetizer or add it to your Dinner as a Side! We love to add Jalapenos and Onions for an Extra Zest! Years ago, we only Made these on the Barbecue for Party Food! We started experimenting with our Oven and with a few Mistakes, We think we have Created a Nice Golden Crispy Brown Cheesy Potato Skins with a Little Spice and Loads of Flavor!

Prep Time: 20 Minutes
Oven Temperature: 400 Degrees Fahrenheit
Baking Time: 40 Minutes

Cheesy Jalapeno Potato Skins Ingredients:
6 Idaho Potatoes
1 Jalapeno
1 Small Onion
1/2 – 1 Teaspoon Salt
1/2 – 1 Teaspoon Ground Black Pepper
1 Cup Shredded Cheddar Cheese
Cheesy Jalapeno Potato Skins Instructions:
1. First thing to do, is to Prepare the Potatoes. Bake the Potatoes in the Oven or Cook them in the Microwave until Soft. After the Potatoes are done, set aside to let Cool. After the Potatoes are cool, cut the potatoes in Half lengthwise. Then Scoop out all the Potato Meat, Make sure to keep a Layer of Potato on the Skin. Put the gutted Potato Skins on a Baking Sheet.
2. Next Step, Sprinkle Salt and Black Pepper Evenly on all the Potato Skins. Now add the Shredded Cheddar Cheese to each Potato Skin, Filling them to almost the Top.
3. Now you need to Prepare the Onions and Jalapenos. Dice up a Small Onion, making them in to Small Chunks. Then Dice up the Jalapeno in to Small Chunks. Sprinkle Diced up Onions on Top of all the Potato Skins and then Add the Diced Jalapenos on Top.
TIP: We Leave in our Seeds, But if you want Less Spice, Take out the Seeds!
4. PreHeat the Oven at 400 Degrees F. Bake the Cheesy Jalapeno Potato Skins for 40 Minutes or until Crispy.
Serve with your choice of Sauce, We like our Creamy Dijon Taco Yogurt Dip which is Displayed on the Plate Above!
