Sweetly Roasted Zucchini with Balsamic and Garlic are Quick and Delicious! This Squash is slightly firm but very tender, Not Mushy!

Roasted Zucchini Marinated in Balsamic Vinegar and Garlic! These have a sweeter taste and are perfect for your Squash Lovers! Our quick and easy Roasted Zucchini was inspired by our Brussels Sprouts Sweetly Roasted and our Balsamic Roasted Carrots, So Delicious! Best thing about fresh vegetables is they are a healthier Side Dish choice, especially when they taste so good! If you don’t like Mushy Squash, then definitely give these Roasted Balsamic Garlic Zucchini a try!

Marinating Time: 20 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Roasting Time: 20 – 25 Minutes

Roasted Zucchini - Dining in with Danielle

Roasted Balsamic Garlic Zucchini Ingredients:

3 Medium Zucchinis 
2 Tablespoons Extra Virgin Olive Oil (We love California Olive Ranch!)
3 Tablespoons Balsamic Vinegar
3 Tablespoons Fresh Minced Garlic (About 3 Whole Garlic Cloves)
1 Teaspoon Salt (We use Pink Himalayan Salt)
1/2 – 1 Teaspoon Black Pepper 

Roasted Balsamic Garlic Zucchini Instructions:

1. First thing to do, is cut up the Zucchini. We like cutting them in to Thick Half Medallions. After washing the Zucchini, cut off the ends then cut the Zucchini in half. Now you will cut the halves in half log way. Cut those halves in to 4 to 5 Chunks. Finish cutting all the Zucchini.

TIP: We cut the Zucchini in half before cutting in to chunks because the Zucchini is round and it helps the Zucchini from rolling around, you don’t want to cut yourself!

2. In a Bowl with a Lid, add all the Zucchini Chunks. Now add Olive Oil, Balsamic Vinegar, Fresh Minced Garlic and Black Pepper. (Don’t add Salt yet!) Mix all the ingredients really well. Put the lid on and Marinate at room Temperature for 20 Minutes!

3. PreHeat Oven to 375 Degrees F. Now you will need a Baking Sheet with Parchment Paper. (If you don’t have Parchment paper, make sure your Baking sheet is well greased to prevent sticking!) Dump the Marinated Zucchini on the pan and spread them around evenly, Sprinkle with SALT! (You can see the difference of what 20 minutes of Marination will do!)

4. Put the Baking sheet of Marinated Zucchini in the Oven and Roast for 15 Minutes. Then turn over all the Zucchini chunks, so they will be evenly roasted.

5. Now Roast the Zucchini for 10 more Minutes. (Sometimes Oven variations can affect the time of cooking, may be less or more time! This is how our Oven cooks.) When the Zucchini is done, take them out of the oven and let cool slightly. The Balsamic Vinegar will create a Sweet Sauce over the Roasted Zucchini, so Delicious!
