Roasted Purple Potatoes are one of those Side Dishes we serve when we get them on Sale at the Grocery Store! The Potato meat is Creamy and a little sweet, almost similar to a Sweet Potato! Best thing about these is, Purple Potatoes are Healthier for you! Our Roasted Sweet Purple Potatoes and the marinade we smother over them were inspired by our other Vegetable Side Dishes like our Balsamic Roasted Carrots, Brussels Sprouts Sweetly Roasted or our Roasted Balsamic Garlic Zucchini! Prep Time: 10 Minutes
Marination Time: 30 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Bake Time: 40 – 45 Minutes
Simple Roasted Sweet Purple Potatoes Ingredients:
1.5 – 2 Pounds Purple Potatoes
4 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Balsamic Vinegar
3 Tablespoons Fresh Minced Garlic (About 3 Cloves)
1 Teaspoon Black Pepper
1 – 2 Teaspoons Salt
Simple Roasted Sweet Purple Potatoes Instructions:
1. First you will need a bowl with a lid for the Marination of the Purple Potatoes. In the Bowl add the Purple Potatoes, Extra Virgin Olive Oil, Balsamic Vinegar, Fresh Minced Garlic and Black Pepper. Don’t add Salt yet, we add it before Roasting the Potatoes. Now Marinate for 30 Minutes. (Not in the Refrigerator, Put the Lid on and Set aside.)
2. After the Purple Potatoes have marinated, you will need a Baking Sheet with Parchment Paper. (We use Parchment Paper to prevent our Potatoes from sticking, if you have a non-stick Pan, you probably won’t need the Parchment Paper.) Add the Potatoes and all the Marinade on to the Baking Sheet. Sprinkle the Pan of Potatoes with SALT!
Notice how the Marination has started to really soak through the Skin of the Purple Potatoes!
3. PreHeat the Oven at 375 Degrees F. Roast the Purple Potatoes for 20 – 25 Minutes. Then you will flip the Potatoes over.
At this point, You will see the Balsamic and Garlic turning in to a Glaze and Roasting and coating the Purple Potatoes!
4. Now you will Roast the Potatoes for another 20 Minutes. This is where the Potatoes will cook through all the way and Turn the Marinade in to a Glaze soaking up in to your Potatoes.
You might see some darker crispiness on the Potatoes, This is just the Garlic and Balsamic, they do NOT taste Burned, just Full of Sweet Garlic Crispy Potatoes! Creamy on the inside and Crispy on the outside!
