Delicious Easy Cheesy Pasta with TexMex Flavors and Collard Greens! Great for a Vegetarian Meal or a Yummy Side Dish!
Pasta Dishes are a part of our weekly menu and being creative with all kinds of ingredients has resulted in to some DELICIOUS Meals! A few years ago, we started buying Collard Greens every grocery trip because they are good for you and they don’t mush up like Spinach! After eating Boiled Collard Greens all the time, it can get boring! So we started experimenting with Collard Greens in our Pasta with different ingredients! This Vegetarian Pasta is one of our favorites and the Collard Greens are so Yummy in this dish!

Oven Temperature: 350 Degrees Fahrenheit
Baking Time: 25 Minutes
Serves: 4
TexMex Pasta and Collard Greens Ingredients:
16 Ounces Penne Pasta
16 Ounces (8 Cups) Fresh Collard Greens
2 Tablespoon Fresh Minced Garlic
1 Cup Yogurt
2 Tablespoons Extra Virgin Olive Oil
2 Teaspoons Ground Cumin
1/2 Teaspoon Chili Powder
1/2 Teaspoon Ground Black Pepper
1 – 2 Teaspoons Salt
1 Cup Shredded Cheddar Cheese
TexMex Pasta And Collard Greens Instructions:
1. First thing to do, Cook the Pasta. Boil the Penne Pasta in a Pot of Water until the Pasta is Al Dente (Pasta that is still a little firm but Cooked, Not Mushy!) Drain Pasta when done cooking!
2. While the Pasta is Cooking, it’s a good time to Cook the Collard Greens. In a Saucepan with a Lid, add the Chopped Collard Greens with enough water to just cover the bottom of the Pan. Simmer covered on low for about 10 – 15 Minutes.
3. Now it’s time to add the ingredients. Add the Cooked and Drained Penne Pasta and Collard Greens in the same Pan. Then add Minced Garlic, Yogurt, Ground Cumin, Chili Powder, Black Pepper and Salt.
4. Mix all the Ingredients together thoroughly. Then put the Pasta in a Skillet Pan or Casserole Dish. Sprinkle Cheddar Cheese on Top!
5. PreHeat Oven at 350 Degrees F. Bake the TexMex Pasta and Collard Greens for 25 Minutes. Delicious!

This is a great simple Vegetarian Meal or add it as a Side, either way they will be a Family Favorite! Best thing is, the Collard Greens make this meal a little more healthier!
