Banana Cupcakes Smothered with our Creamy Butter Cream Cheese Frosting! Moist Cupcakes with Creamy Frosting with No Powdered Sugar!

We like to make Banana Cupcakes for a special dessert when we have Bananas that have ripened! To make them even more delicious, we top them off with our homemade Creamy Butter Cream Cheese Frosting! These Cupcakes are sweet enough to be a dessert but lower in sugar! Our Banana Cupcakes were inspired by our delicious, Moist Banana Bread Cake! Our moist Banana cupcakes were perfected (according to our tastes) after 3 years of experimenting, these are a Family Favorite!

Prep Time: 20 Minutes
Bake Time: 25 Minutes
Oven Temperature: 350 Degrees Fahrenheit
Makes: 12-15 Cupcakes

Banana Cupcakes:

2 Cups White Flour (try not to use bleached or enriched white flour, we like King Arthur Flour )
1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 1/4 Teaspoons Cinnamon
1/4 Teaspoon Nutmeg (Optional but it is delicious with this spice)
3 Ripe Bananas Mashed  (use ripe bananas that are browning or use frozen bananas unthawed)
1/2 Cup Pure Cane Sugar (with the sweetness of ripe bananas, this is all the sugar you need!)
1 Cup Butter Melted (Real butter is best)
2 Eggs

Banana Cupcake Instructions:

1. First thing, you will need 2 bowls, one is for dry ingredients and the other is for wet ingredients. Now add the Flour, Baking Soda, Baking Powder, Salt, Cinnamon and nutmeg in a bowl than make sure the ingredients are mixed well, set aside!

2. In the other bowl, you will add Sugar and Melted butter. Mix well! ( If you are using a mixer like me than mixing time will be around 1-2 minutes, or hand mix until well blended.)

3. Now add the mashed bananas and eggs. Mix well! (All mixing can be done by hand!)

4. Now add the bowl of dry ingredients to the wet ingredients and gently mix until well blended but be careful not to beat the batter! (The color of the batter might differ depending on ripeness of bananas or if you used frozen!)

5. PreHeat Oven to 350 Degrees F. Set up your Muffin Pan with Cupcake liners or use Foil lined Cupcake Cups and put on a flat baking sheet (this is what we do). Now evenly scoop Banana batter in to Cupcake liners. Fill the batter to almost the top of cupcake liners.

6. Bake for 20 – 25 Minutes. Check the center of the cupcakes with a toothpick for doneness! There should be no doughy top!
Cool Completely for at least an hour before Frosting these delicious Banana Cupcakes!
(We made 12 but our son got to one of them! He thinks they are delicious either way, no frosting and frosting!) See Below for Frosting Recipe!

Creamy Butter Cream Cheese Frosting Recipe

Tip:

Our frosting recipe is enough to frost a layered cake, if you only want enough for 1 batch of cupcakes, we recommend cutting the Butter Cream Cheese Frosting Ingredients by Half!

Ingredients:

3 8 Ounce Cream Cheese Room Temp
1/2 Cup Butter Room Temp (Not Margarine)
1 Cup Cane Sugar (we like to use Organic Florida Crystals Sugar cane but there are others that are good)

Instructions:

1. This recipe works best if you have a mixer or hand mixer due to the amount of whipping the butter and sugar need. We are going to use our  KitchenAid mixer for this process. Put butter and sugar in a mixing bowl and start mixing. This process will take over 10 minutes and a lot of scraping the sides of the bowl! (we want to make sure all the sugar is off the sides and whipped evenly to make a smooth frosting.)

2. Now put the 3-8 oz packages of cream cheese in the bowl and start mixing at a low speed. It usually takes another 3 to 5 minutes of mixing and scraping the sides to make sure all the ingredients are mixed and creamy. Here is what the frosting should look like, you will see the creamy consistency as well as a stiff frosting but not hard and very spreadable!

3. The frosting is ready to smother the cupcakes! (Make sure Cupcakes are cooled completely so the fresh Butter Cream Cheese Frosting doesn’t slide off from the Cupcakes being too warm! Here we are showing you how easy it is!

If you actually have any of these delicious cupcakes left, we recommend putting them in a covered container! The Frosting marries in to the Cupcakes and creates even more Moist Cupcake! So delicious! We don’t consider these healthy but they are Healthier! We use all fresh REAL Ingredients and lowered an incredible amount sugar compared to other Cupcake recipes!
