Crispy Potatoes with Garlic and Lemon then Smashed make these like little Hash brown Fries! Perfect Side Dish for any Meal or for a Appetizer treat!
These crispy Smashed Potatoes are such a treat and so easy to make! We eat Potatoes at least 3 times a week, so coming up with different ways to make Potatoes tasty has developed in to many different Delicious Side Dishes! Including our Taco Oven Baked Round Fries, Roasted Garlic Lemon Potatoes, Broccoli Cheese Twice Baked Potatoes and some Potato Salads to name a few!

Prep Time: 20 Minutes
Oven Temperature: 400 Degrees Fahrenheit
Baking Time: 45 Minutes
Serves 4
Smashed Garlic Lemon Crispy Potatoes Ingredients:
6 Medium Potatoes (We use Red Potatoes)
6 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Lemon Juice
3 Tablespoons Fresh Minced Garlic
1 Teaspoon Salt (We use Pink Himalayan Salt)
1/2 Ground Black Pepper
Smashed Garlic Lemon Crispy Potatoes Instructions:
1. First thing to do, Cook the Potatoes whole. You can do this in the Microwave or Bake your Potatoes in the Oven wrapped in Foil.
(Do Not Boil the Potatoes, they will be mushy and will not get crispy!)
2. On a Baking Sheet, add 4 Tablespoons of Extra Virgin Olive Oil and the Fresh Minced Garlic. Brush the oil and garlic around the pan making sure to coat the entire Baking sheet so the Potatoes won’t stick. (Our Pan is well used, probably need a new one but it does the job!)
3. Next thing to do is cut the Cooked Potatoes. The best way is, cut the Potatoes in half then cut the halves in half. Put the Potatoes with skin side up on the already prepared Baking Sheet.
4. After all the Potatoes are cut and on the Baking Sheet, it’s time to make the Marinade! In a Bowl, add 2 Tablespoons of Extra Virgin Olive Oil and 2 Tablespoons of Lemon Juice, then mix it up. With a Basting Brush, Brush all the tops of the Potatoes with the Olive Oil and Lemon Juice Mixture. Now take a fork and gently press the potato down to Smash it Not Mash them! (It’s Ok if they don’t look perfect, they will crisp up!)
5. Once you have Smashed all the Potatoes, make sure they are evenly spaced on the Baking Sheet. Sprinkle with Salt and Black Pepper.
6. PreHeat the Oven at 400 Degrees F. Bake for 25 Minutes then turn the Smashed Potatoes over with a Spatula. (Don’t mind my Dirty Oven, we use it A LOT!)
7. After all the Potatoes are flipped over, Bake for 20 – 25 More Minutes. (This is where most of the Crispiness comes from!) When the Smashed Potatoes are done, take them out of the Oven and cool Slightly!
