Moist Strawberry Banana Cake Smothered in Butter Cream Cheese Frosting is Simple and Perfect for Dessert and Parties!
Strawberries and Bananas married together perfectly for a Berry Banana flavored Moist Dessert! Why did we Puree the Strawberries? Basically it is preference, we love Strawberries but not whole Strawberries in Baking! Making a Strawberry Puree Reduction was the perfect way to get the berry flavor without chunks of Strawberry and still keep the cake MOIST! Our Carrot Banana Cake with Cream Cheese Frosting and Banana Cupcakes were the inspiration for our VERY MOIST Strawberry Banana Cake! The creation of our Creamy Butter Cream Cheese Frosting a few years ago is the only frosting we use, it’s that creamy and delicious!

Strawberry Puree Prep: 1 Hour
Prep Cake Time: 20 Minutes
Bake Time: 25 – 30 Minutes
Oven Temperature: 350 Degrees Fahrenheit
Butter Cream Cheese Frosting Prep Time: 10-15 Minutes
Makes 1 13X9 Sheet Pan or 2 Round Pans
Strawberry Banana Cake:
2 Cups White Flour (try not to use bleached or enriched white flour, we like King Arthur Flour )
1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
3 Ripe Bananas Mashed
1 Cup Homemade Strawberry Puree (16 oz Frozen Strawberries, see Instruction #1)
1/2 Cup Pure Cane Sugar
1 Cup Butter Melted (Real butter, NO MARGARINE)
2 Eggs
Cream Cheese Frosting:
1 Cup Cane Sugar
1/2 Cup Real Butter
2 8 Ounce Packages Cream Cheese
TIP:
We only used 2 8 Ounce Packages of Cream Cheese instead of the 3 8 Ounce Packages that is in our Original Creamy Butter Cream Cheese Frosting Recipe because we were not layering the cake, it is a Sheet Cake!
Strawberry Banana Cake Instructions:
1. First thing to do, make the Strawberry Puree! Thaw out a 16 ounce bag of Strawberries. Put the entire bag in a Blender and Puree. Now put the pureed strawberries in a pan on the stovetop at Low heat, simmer for about an hour. Make sure to stir occasionally!
Tip: Fresh Strawberries can be used, add about 2 Tablespoons of water to Blender, Follow Instruction #1!
This process is called Puree Reduction. The Strawberry Puree needs to reduce by half and become thicker! When the Puree is done, it will look like this! Set Aside and Cool Completely, this makes about 1 Cup!
2. Next Process, you will need 2 bowls, one for dry ingredients and one for wet.
Add Flour, Baking Soda, Baking Powder, Salt and Cinnamon in a bowl and mix up, Set Aside!
3. Before mixing the wet ingredients together, mash up 3 ripe bananas!
Now in another bowl, mix the Cane Sugar and Melted Butter until well blended. (We used our KitchenAid Mixer, blend for 30 seconds.)
Add the mashed bananas and Strawberry Puree, then mix! (Mix with mixer for 30 to 40 seconds,or by hand until mixed well!)
Add the Eggs and mix again until blended. Here is what it should look like!
4. Now add the dry ingredients to the wet ingredients and mix until blended. (About 30 seconds with the mixer.)
Your cake batter should look like this!
5. PreHeat the Oven to 350 Degrees F.
Grease a 13X9 inch Baking Pan.
Pour the Strawberry Banana Cake batter in the pan and Spread evenly.
Bake for 25 Minutes then check with a toothpick, add 5 more minutes if needed!
Take out and let cool completely before Frosting with our Delicious Butter Cream Cheese Frosting! Instructions follow!
Butter Cream Cheese Frosting Instructions:
1. With a mixer, cream the room temperature Butter with the Cane Sugar.
This will take about 5-10 Minutes, the Cane Sugar after creaming will still have Sugar crystals! (Don’t worry, the next process will get rid of the crystals!)
2. Now add 2 8 ounce packages of room temperature Cream Cheese.
Start mixing meanwhile scraping the sides of bowl to make sure all the ingredients are incorporated!
About 5 Minutes should cream the frosting and get rid of the Cane Sugar crystals.
Now smother the Strawberry Banana Cake with Creamy Butter Cream Cheese Frosting!
Make sure to cover the cake with a lid to keep it Moist! Enjoy!

We don’t eat a lot of desserts but if we do, they are our own creations from our kitchen! Lots of mistakes have been made, it took a couple of years to get the Moist cake we love! Our Banana Bread recipe has been the inspiration behind most of our Baking! Obviously, we are Banana fans and there are always those really ripe Bananas hanging around! Really loved this cake you made on my 42 birthday. Loved the strawberry banana combination with the cream cheese frosting. Really enjoy that all your cakes don’t leave the bad sugar aftertaste because of the small amount of sugar needed, and the natural products you use.
