Moist Carrot Banana Cake Smothered in Butter Cream Cheese Frosting is a Perfect and Simple Dessert, snack or Breakfast!
Our moist and delicious Carrot Banana Cake was inspired by our Banana Bread Cake! It’s the perfect combination of Ripe Sweet Bananas with Shredded Carrots than Smothered with our Creamy Butter Cream Cheese Frosting with NO POWDERED Sugar! Because the Bananas and Carrots are sweet enough, this Cake only has 1/2 Cup of Cane Sugar for a Sheet Cake Pan and 1 Cup of Cane Sugar in our Creamy Delicious Frosting, that’s a total of 1 1/2 Cups for a whole Sheet of Cake!
This Recipe can easily be mixed by hand or your Mixer, this time we used our KitchenAid Mixer!

Prep Cake Time: 20 Minutes
Bake Time: 25 – 30 Minutes
Oven Temperature: 350 Degrees Fahrenheit
Butter Cream Cheese Frosting Prep Time: 10-15 Minutes
Makes 1 13X9 Sheet Pan or 2 Round Pans
Carrot Banana Cake:
2 Cups White Flour (try not to use bleached or enriched white flour, we like King Arthur Flour )
1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
4 Ripe Bananas Mashed
1/2 Cup Pure Cane Sugar
1 Cup Butter Melted (Real butter, NO MARGARINE)
2 Eggs
1 Cup Shredded Carrots (About 2 Carrots)
Cream Cheese Frosting:
1 Cup Cane Sugar
1/2 Cup Real Butter
2 8 Ounce Packages Cream Cheese
TIP:
We only used 2 8 Ounce Packages of Cream Cheese instead of the 3 8 Ounce Packages that is in our Original Creamy Butter Cream Cheese Frosting Recipe because we were not layering the cake, it is a Sheet Cake!
Carrot Banana Cake Instructions:
1. You will need 2 bowls, one for dry ingredients and one for wet. Add Flour, Baking Soda, Baking Powder, Salt, Cinnamon and Nutmeg in a bowl and mix them up, Set aside!
2. Before Mixing wet ingredients together, shred 1 Cup of carrots with a grater!
Now mash 4 ripe Bananas in a small bowl (we leave the bananas a little chunky)!
Here is me shredding carrots!
3. Next thing to do is mix Cane Sugar and Melted Butter together.
Now add mashed Bananas and mix! (Mix for about 30 seconds with mixer or by hand until blended together.)
Add 2 eggs and mix again until blended.
Add Shredded Carrots to wet ingredients and mix.
Now add dry ingredients to mixed wet ingredients, Mix until blended!
4. PreHeat Oven at 350 Degrees F.
Grease a 13X9 Baking Pan.
Now pour Carrot Banana Cake Batter in Pan and spread evenly!
5. Bake for 25 Minutes then check with a toothpick to see if Cake is done! Add 5 More Minutes if needed!
Take out of Oven and let cool completely.
Butter Cream Cheese Frosting Instructions:
1. Using a mixer, cream the room temperature Butter and Cane Sugar together.
Make sure butter and sugar are well blended, it takes about 5 – 10 Minutes!
(Cane Sugar doesn’t cream up with butter that well, we are just trying to get it blended really well, there will still be sugar crystals until next step!)
2. Now add 2 8 ounce packages of room temperature Cream Cheese.
Start mixing and scraping sides of bowl for about 5 Minutes, or until the frosting is smooth with NO sugar crystals!
3. Now it’s time to frost the Carrot Banana Cake!
We are not cake decorators but our Creamy Butter Cream Cheese Frosting smothered over our Carrot Banana Cake is Delicious, Moist and Creamy!
You can leave the cake in the pan and frost or do what we do, put the cake on a serving plate and frost!

Great recipe! I use 1-2/3 cups gluten free flour blend and the cake part turned out wonderful. The frosting was really good, too. Not overly sweet at all. This is a definite keeper!
Thank You! We have used Gluten Free in this as well, but can get expensive, we make it too much lol! We have found that less sugar tastes better!

I think that would be fine, you might have to add a tad more sugar because carrots are sweeter.
Danielle, can I use a small Bundt pan for this cake? Same amount of cooking time?

Can I use brown sugar instead of cane sugar?
I know brown sugar has a different taste, I am sure it would work but will be darker in color and flavor might be different.
