Ground Turkey, TexMex Flavorings, Vegetables and Cheese is the perfect Simple Meal! This is our version of a Frittata or crustless Mexican Quiche!

Crustless Quiche or Frittatas are favorite meals in our home when we need something quick and easy to feed a crowd like our Dinner Quiche! We originally created this recipe when we had too much leftover Taco Meat from our Delicious Family Favorite Tacos! Our other Leftover Taco Meat also inspired our Easy Cheesy Taco Pasta!
Since we loved this combination, we decided to make the TexMex Taco Meat fresh and add the vegetables in the Ground Turkey Taco meat for this Frittata but it you have leftover Taco Meat, throw that in!

Prep Time: 45 Minutes
Bake Time: 30-40 Minutes
Oven Temperature: 375 Degrees Fahrenheit
Servings: 6-8 (We double this recipe for our Family!)

Cheesy TexMex Turkey Frittata Ingredients:

1 LB Ground Turkey
2 Bell Peppers
1 1/2 Tablespoons Fresh Minced Garlic
1-1 1/2 Tablespoons Ground Cumin
1/2 Teaspoon Chili Powder
1/4 Teaspoon Cayenne Pepper
1/2 Teaspoon Black Pepper
1 Teaspoon Salt
6 Eggs
1 Cup Water (For Taco Meat and Egg Mixture)
1-1 1/2 Cups Shredded Cheddar Cheese

Cheesy TexMex Turkey Frittata Instructions:

1. First thing to do is to prepare the Taco Meat. You will need a skillet pan with the Stovetop set to around Medium Heat.
When the pan is hot, add the Ground Turkey Meat and break it up a bit, not too much because we are trying to keep the meat a little chunky! Cook until the meat is Brown but still has some liquid in it, about 15 minutes.

2. Chop the Green Peppers (we also used Yellow Peppers) in to nice size chunks. Add the Garlic and Green Peppers to the Cooked Ground Turkey and Saute at Medium Heat until Brown Crust form on the Ground Turkey, make sure to stir often. The vegetables will still be a little firm, about 10 Minutes.

(The Brown Crust on the Meat gives a great flavor that adds to any Taco Meat, we do this method with all our TexMex Meat dishes!)

3. Turn your Stovetop to Medium/Low Heat, Now add Cumin, Chili Powder, Cayenne Pepper, Black Pepper and Salt. Stir and make sure all the seasonings are mixed really well. 
Add 1/2 Cup of Water to the Taco Meat Mixture, Simmer for 20 Minutes!

4. After 20 Minutes, take the Taco Meat off the Stovetop and let cool for 5-10 Minutes.
PreHeat the Oven at 375 Degrees F.

5. You can use the same Skillet pan, if it is Oven safe or put the Taco meat in a greased pan before next step. (We like using our Calphalon Skillet pans for our Frittata and Quiche Meals.)
Mix up the Eggs in a bowl and add 1/2 cup of Water to the eggs. Pour the egg mixture over the Taco Meat. Sprinkle Cheese on top.

Tip: After we pour the egg over the Taco Meat, we gently shake the pan to evenly disperse the egg, this helps the eggs cook evenly and not bubble with huge air pockets in your Frittata!

6. Bake in 375 Degree F Oven for 30 Minutes, then check. If the egg is still jiggly in the middle then Bake for 5-10 Minutes More.
Take out of Oven and let cool a little before cutting slices! Yum!
